This is a variation of a Lemon Jello Pound Cake I found on another recipe site. I'm experimenting with cake decorating/sculpting, and it carves rather nicely. It called for lemon jello instead of strawberry, lemon extract instead of vanilla, and apricot nectar instead of orange juice. I will continue to experiment with different flavors of jello, extracts, and juices. I would like to encourage you to do the same and post your variations in your reviews. NOTE: For my purposes, I used cupcake tins for my layers, so I've set the servings accordingly. UPDATE: Originally, I posted this with orange juice instead of strawberry-banana nectar, so the first 2 reviews reflect that. I have since tried strawberry-banana nectar, and I like it much better for the strawberry flavor. If you want to try what's been reviewed or can't find the nectar, try the OJ. It's just got a little bite to it where the nectar is a more mellow flavor.

1 1/2 cups butter
1/2 cup oil
3 cups sugar
1/2 teaspoon baking powder
3 cups flour
1 cup milk
1 teaspoon coconut flavoring
1 teaspoon rum flavoring
1 teaspoon butter flavoring
1 teaspoon lemon flavoring
1 teaspoon vanilla flavoring
1 teaspoon almond flavoring
1 cup sugar
1/2 cup water

1 (20 ounce) can peach pie filling
1 (15 ounce) can mandarin oranges

Steps:

  • For Linda's Cake:.
  • Preheat oven to 350 degrees.
  • Mix sugar, butter,and oil together.
  • Add eggs and mix well.
  • Sift together dry ingredients and add to the cream mixture.
  • Add milk and 1 tsp of each of the Five flavorings.
  • Bake in a greased and floured tube pan at 350 degrees for one and half hours.
  • Cool 10 minutes in the pan.
  • Remove cake from pan.
  • For the Glaze:.
  • Combine all the glaze ingredients in a saucepan.
  • Bring to a boil and continue until sugar is disolved.
  • Place cake on pretty serving dish and pour glaze over.
  • For Julie's Fruit:.
  • Combine the pie filling, oranges, pineapple, bananas and 1/2 pint of strawberries.
  • Put in a pretty bowl.
  • To Serve:.
  • Slice Pound Cake and place a slice on plate with Julie's Fruit on top.
  • And Enjoy!

This is Borrowed and in my collection, from The Joys of Jello Recipes. This fruit flavored Cake makes a real impression, on people Not knowing it has Jello in it for Flavor. So easy, you can have any flavor or color Pound cake you Desire.

FRUIT FLAVORED POUND CAKE
1 Box - white or yellow cake mix or pound cake mix
1 Sm Box - jello gelatin ( any fruit flavor)
3/4 C - water
1/2 Cup - veg. oil
4 lg - eggs beaten

Steps:

  • In a Large Bowl add cake mix, Add remaining ingredients, to the cake mis.. Beat 3 min. or till smooth and creamy.
  • Pour batter into 10" tube pan, Lined on the bottom with wax paper. (see note Below on pans you use)
  • Bake @ 350 50-60 min. COOL in pan 15 min, Remove from pan and cool on cake rack. Sprinkle with Pdr sugar or Drizzle with Glaze or Frost if desired.
  • NOTE: This cake can be baked in different pans be sure they are Pam sprayed & paper lined. (2-3) Mini pans @ 350 25-30 min (2) 5X9X3" loaf pans Bake @350 40-45 min (1) 13X9X2" pan @ 350 40-45 min (2) 9" layer cake pans @ 350 30-35 min (1) 9 in Tube Pan @ 350 60-65 min
