JUDY'S SAUERKRAUT

Judy's Sauerkraut image

This is my friend Judy's sauerkraut recipe, and in my opinion, it's simply the best. Great served with crusty rye bread, mashed potatoes, and freshly cooked apples. Combine the kraut with a meat entree and bake in the oven at a low temperature 1 to 2 hours. Examples of meat entrees that work really well are small pork roasts, tenderloins, or chops, bratwursts, knockwursts, and kielbasa. Slow cooker temperatures vary, so this may be done sooner than 8 hours.

Tips:

  • Use a crock or glass jar for fermentation. Plastic containers can leach chemicals into the sauerkraut.
  • Keep the sauerkraut in a cool, dark place during fermentation. A temperature between 65-75°F (18-24°C) is ideal.
  • Check the sauerkraut regularly for mold or spoilage. If you see any mold, discard the sauerkraut immediately.
  • Sauerkraut is ready to eat after 2-4 weeks of fermentation. The longer you ferment it, the more sour it will become.
  • Sauerkraut can be stored in the refrigerator for up to 6 months.

Conclusion:

Sauerkraut is a delicious and healthy fermented food that is easy to make at home. It is a good source of probiotics, which are beneficial bacteria that help to improve gut health. Sauerkraut can also be used to add flavor and acidity to a variety of dishes. If you are looking for a healthy and delicious way to add some probiotics to your diet, then sauerkraut is a great option.
