JULIA CHILD'S HOLLANDAISE SAUCE

This classic recipe comes from "Julia and Jacques Cooking at Home" that was published in 1999.

Time 15m

Yield 1 1/2 cups

Number Of Ingredients 7

3 egg yolks
1 tablespoon water
1 tablespoon fresh lemon juice, if needed (or more)
6 -8 ounces very soft unsalted butter
1 dash cayenne pepper
salt, to taste
fresh ground white pepper, to taste

Steps:

  • Whisk the yolks, water, and lemon juice in the saucepan for a few moments, until thick and pale (this prepares them for what is to come).
  • Set the pan over moderately low heat and continue to whisk at reasonable speed, reaching all over the bottom and insides of the pan, where the eggs tend to overcook.
  • To moderate the heat, frequently move the pan off the burner for a few seconds, and then back on. (If, by chance, the eggs seem to be cooking too fast, set the pan in the bowl of cold water to cool the bottom, then continue).
  • As they cook, the eggs will become frothy and increase in volume, and then thicken. When you can see the pan bottom through the streaks of the whisk and the eggs are thick and smooth, remove from the heat.
  • By spoonfuls, add the soft butter, whisking constantly to incorporate each addition. As the emulsion forms, you may add the butter in slightly larger amounts, always whisking until fully absorbed. Continue incorporating butter until the sauce has thickened to the consistency you want.
  • Season lightly with salt, pepper, and a dash of cayenne pepper, whisking in well. Taste and adjust the seasoning, adding droplets of lemon juice if needed. Serve lukewarm.

JULIA CHILD'S EASY PEEL GARLIC

Julia Child's Easy Peel Garlic image

I didn't read this in any of Julia's books, but rather by watching her show. Some of my earliest memories are of sitting with my mother as a little girl, watching Julia on the television.

Time 7m

Yield 1 batch (variable)

Number Of Ingredients 2

1 head garlic (or as few as 1 clove - it depends on how many you need)
1 -2 cup water

Steps:

  • Remove all the cloves of garlic from the head.
  • Take a smallish saucepan and heat to boiling about a cup or two of water; add the cloves of garlic and simmer for 1 minute.
  • Drain the water and peel the garlic (which should be softish and should peel easily) - peeling an entire head can take about 5+ minutes, depending on how accustomed you are to doing it.
  • Use in whatever recipe(s) you'd like!
  • You can store the peeled garlic in an airtight container in the refrigerator for up to two days.
  • Note: you can, of course, even do a single clove in this manner - I just like to do a bunch at a time.

Yield 4 serving(s)

Number Of Ingredients 13

24 fat fresh asparagus spears
1 cup thinly sliced onion
1/3 cup good quality olive oil
2 -4 large garlic cloves, peeled and thinly sliced
1 lemon, zest of
1/2 teaspoon herbs, mixture such as italian or 1/2 teaspoon herbes de provence
1 bay leaf
1/2 teaspoon peppercorn
1/2 cup dry white wine or 1/2 cup dry white french vermouth
1/4 cup fresh lemon juice
2 cups water
1/2 teaspoon salt
fresh minced parsley

Steps:

  • Before peeling asparagus, start on the marinade. In a heavy saucepan, cook onions slowly in the olive oil with garlic, zest, herbs, and bay leaf. When tender (about 10 minutes), add peppercorns, wine, lemon juice, water, and salt. Cover and simmer slowly for about 20 minutes.
  • Peel asparagus. Lay in a flameproof casserole dish and pour marinade over so asparagus is just covered with liquid (more water may be added if needed). Bring to a boil, cover, and simmer slowly for 20 minutes, or until asparagus is tender. Take out asparagus and arrange on serving platter. Boil down the cooking liquid until lightly syrupy and spoon over the asparagus. Sprinkle with parsley.

Olive Garden Asparagus With Lemon and Minced Onions image

This recipe is from the files of Riserva di Fizzano and the Rocca delle Macie Winery - Olive Garden's Italian Partners.

Provided by Member 610488

Categories     Vegetable

Time 20m

Yield 4 serving(s)

Number Of Ingredients 7

1 tablespoon olive oil
1 bunch fresh asparagus
1 lemon, quartered
1/4 teaspoon salt
1 pinch ground black pepper
1 tablespoon yellow onion, minced
1 lemon, sliced thinly

Steps:

  • Cut 1 inch off of the bottom of the asparagus. Discard. Heat pan over medium heat. Add extra virgin olive oil. Add onion and cook for approximately 3 minutes or until onion starts to soften.
  • Place the remaining ingredients in a saucepan, except lemons. Squeeze quartered lemons into same saucepan and place lemon in as well. Fill pan with enough water to cover the asparagus half way and cover.
  • Cook at medium to high heat until the asparagus is bright green and tender (2-3 minutes). Place asparagus and onion on platter to serve. Garnish with sliced lemon.

Tips:

  • Select the Right Asparagus: Choose fresh, firm asparagus spears with tight tips and no woody ends.
  • Trim the Asparagus: Snap off the tough ends of the asparagus spears where they naturally break.
  • Use a Wide Pan: A wide pan allows the asparagus to cook evenly and prevents overcrowding.
  • Don't Overcook the Asparagus: Asparagus cooks quickly, so be careful not to overcook it. It should still have a slight crunch when done.
  • Season Generously: Don't be afraid to season the asparagus generously with salt and pepper. You can also add other herbs and spices to taste.
  • Serve Immediately: Asparagus is best served immediately after cooking. It can be enjoyed on its own or as a side dish.

Conclusion:

Julia Child's Asparagus Simmered in Onions, Garlic, and Lemon is a simple but delicious dish that showcases the delicate flavor of asparagus. With just a few ingredients and a little bit of time, you can create a side dish that is both healthy and flavorful. Whether you're serving it for a special occasion or a weeknight dinner, this dish is sure to impress.
