JUST LIKE KFC COLESLAW - COPYCAT

Just Like Kfc Coleslaw - Copycat image

Creamy juicy coleslaw that the buddies at my significant other's work could not believe this was not from KFC. I have never found a recipe for the way I make it. I don't think it would be as juicy with real mayo, the sugar makes it juicy

Provided by MinnesotaCook

Categories     Vegetable

Time 40m

Yield 1 half gallon container, 12-16 serving(s)

Number Of Ingredients 6

8 cups finely chopped cabbage (1 head)
1/4 cup finely grated and chopped carrot
1/4 cup finely diced onion
1/2 cup Miracle Whip
1/2 cup sour cream
1/3 cup sugar

Steps:

  • Finely Chop the Cabbage and put in large mixing bowl.
  • Add the other ingredients and mix well.
  • Put in a container and refrigerate covered. I use a half gallon plastic ice cream container. I find it best to sit over night or for several hours -- for the flavors to blend and allow the sugar to bring out the juices. I serve in tiny desert bowls as it is quite juicy.

JUST LIKE KFC COLESLAW - COPYCAT

I copied these ingredients from the KFC coleslaw container years ago. Yes, they did list Miracle Whip, not mayo! It always goes quick, but I never get any compliments when I bring it as a dish to pass because they all think that I just picked it up from KFC and put it in my own bowl! I use the bags of coleslaw mix from the produce section of my store and chop it in the food processor, but you can use a 1 lb head of cabbage, and a couple of carrots instead if you wish.

Tips:

  • To make the KFC coleslaw dressing, whisk together mayonnaise, sugar, vinegar, celery seeds, salt, and pepper in a medium bowl until well combined.
  • Shred the cabbage and carrots using a food processor or mandoline. If you don't have either of these tools, you can use a sharp knife to thinly slice the cabbage and carrots.
  • Add the shredded cabbage and carrots to a large bowl. Pour the dressing over the cabbage and carrots and toss to coat evenly.
  • Serve the coleslaw immediately or chill for at least 30 minutes before serving. Coleslaw can be stored in the refrigerator for up to 3 days.
  • For a creamier coleslaw, use half mayonnaise and half sour cream in the dressing.
  • For a tangier coleslaw, add 1 tablespoon of apple cider vinegar to the dressing.
  • For a sweeter coleslaw, add 1 tablespoon of sugar to the dressing.
  • For a spicier coleslaw, add 1/4 teaspoon of cayenne pepper to the dressing.
