1 lb pork tenderloin, cut into 12 pieces
1/2 tsp salt
1/4 tsp black pepper
2 tsp olive oil
4 medium peaches, peeled and sliced
1 Tbsp lemon juice
1/4 c peach preserves

  • 2. Add peaches and lemon juice, stirring to loosen brown bits, cook and stir over medium heat for 3-4 minutes or until peaches are tender. Stir in pork and preserves heat through.

Tips:

  • To ensure the pork tenderloin is cooked evenly, use a meat thermometer to check the internal temperature. It should reach 145°F (63°C) for medium-rare or 160°F (71°C) for medium.
  • If you don't have a meat thermometer, you can also check the doneness of the pork tenderloin by cutting into it. The juices should run clear, not pink.
  • Let the pork tenderloin rest for 10 minutes before slicing and serving. This will help the juices redistribute throughout the meat, making it more tender and flavorful.
  • If you want a crispy crust on your pork tenderloin, sear it in a hot pan before roasting it in the oven.
  • You can also grill or smoke the pork tenderloin. Just be sure to adjust the cooking time accordingly.

Conclusion:

Pork tenderloin is a versatile and delicious cut of meat that can be cooked in a variety of ways. Whether you're roasting it in the oven, grilling it, or searing it in a pan, there's a recipe out there for everyone.
