1 stick (1/2 cup) salted butter
1/2 cup all-purpose flour
4 1/2 cups whole milk
2 teaspoons salt
1 1/4 teaspoons paprika
3/4 teaspoon garlic powder
3/4 teaspoon onion powder
3/4 tablespoon dried oregano
1/2 teaspoon cayenne pepper
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1/3 cup plus 2 teaspoons white vinegar

Steps:

  • Melt the butter on low heat, preferably in a double boiler, or, paying close attention, stirring regularly in a pot. Stir in the flour, incorporating it into the butter thoroughly until smooth. Slowly add the milk, stirring constantly. Cook on low-medium heat, stirring regularly, until it reaches a silky, creamy consistency. Whisk in the salt, paprika, garlic powder, onion powder, oregano, cayenne, nutmeg and cloves. Cook for 5 minutes. Whisk in the vinegar, adding slowly. Cook for another 5 minutes, whisking often.

1 -3 tablespoon horseradish (I use 3)
1/4 cup lemon juice
1 tablespoon Worcestershire sauce
1 tablespoon garlic powder

1/2 teaspoon kosher salt

3 quarts cold water
¼ onion, sliced
½ lemon
2 cloves garlic, peeled and bruised
2 sprigs fresh tarragon
1 tablespoon seafood seasoning (such as Old Bay®)
1 teaspoon whole black peppercorns
1 bay leaf
½ cup ketchup
¼ cup chili sauce
¼ cup prepared horseradish
1 teaspoon lemon juice
1 teaspoon Worcestershire sauce
3 drops hot sauce, or to taste
1 pinch salt
2 pounds shell-on deveined jumbo shrimp

Steps:

  • Stir water, onion, lemon, garlic, tarragon, seafood seasoning, peppercorns, and bay leaf together in a large pot; bring to a simmer and cook until flavors blend, about 15 minutes.

2 lbs shrimp, raw (21-25, peeled and deveined )
1/2 cup kosher salt
1/2 cup sugar
2 cups boiling water
4 cups ice
2 quarts ice water, for bath
3 quarts water
1 lemon, sliced thin
2 stalks celery, chopped
1 carrot, chopped 1/2 onion cut in half
1 teaspoon crushed red pepper
1/3 cup kosher salt
1 tablespoon seafood boil (Zatarains liquid concentrated)
1 teaspoon whole peppercorn

Steps:

  • 1st thaw the shrimp in cold water.
  • Brine the shrimp:.
  • boil the water and sugar and salt.
  • now add the ice and let in melt completely.
  • brine should be cold.
  • add shrimp for 20 minutes then rinse well under cold water.
  • Cook the shrimp:.
  • boil the last 7 ingredients for 10 minutes.
  • now add the shrimp -- cook for 3- 5 minutes, DO NOT OVER COOK!
  • when shrimp are bright pink they are done.
  • quickly strain shrimp and add to ice bath for 10 minutes.
