KALBI (KOREAN BBQ SHORT RIBS): AUTHENTIC RECIPE

Kalbi (Korean BBQ Short Ribs): Authentic Recipe image

After trying many recipes for homemade-style Korean BBQ, I finally found a great recipe from a friend who learned it from his mom. It's sweet, salty, spicy, and very tender (Thanks to the Coke®). I use this same recipe to make Bulgogi and Dae Ji Bool Gogi (Spicy Pork) and simply change the onions to sliced bulbs for the bulgogi.

Tips:

  • Choose the right ribs: Select short ribs that are about 1/2 inch thick and have a good amount of marbling. This will ensure that they are tender and flavorful.
  • Marinate the ribs for at least 24 hours: This will help the flavors to penetrate the meat and make them more tender. You can use a variety of marinades, but a simple mixture of soy sauce, brown sugar, garlic, and ginger is a good place to start.
  • Cook the ribs over indirect heat: This will help to prevent them from burning and will allow them to cook evenly. You can use a grill, a smoker, or even an oven to cook the ribs.
  • Baste the ribs frequently: This will help to keep them moist and prevent them from drying out. You can use the marinade, barbecue sauce, or even just water to baste the ribs.
  • Cook the ribs until they are fall-off-the-bone tender: This will usually take about 2-3 hours, but it may vary depending on the type of ribs and the cooking method you are using.

Conclusion:

Kalbi is a delicious and flavorful Korean barbecue dish that is perfect for any occasion. By following these tips, you can make sure that your kalbi turns out perfect every time. So fire up the grill and get cooking!
