THE MOTHERSHIP TOMATO SALAD

The Mothership Tomato Salad image

Provided by Jamie Oliver

Categories     side-dish

Time 30m

Yield 4 servings

Number Of Ingredients 7

2 1/4 pounds mixed ripe tomatoes, different shapes and colors
Sea salt and freshly ground black pepper
A good pinch dried oregano
Red wine or balsamic vinegar
Extra-virgin olive oil
1 clove garlic, peeled and grated
1 fresh red chile, seeded and chopped

Steps:

  • This is an incredible tomato salad but there are two things to remember if you want to wow your guests with something so simple. The first is that you should try to get a mixture of different, tasty, local (if possible) tomatoes in all different shapes, sizes and colors. Second, the flavor is brought out by salting the tomatoes, so don't skip this bit. Some people get worried about putting this much salt on their food, but the bulk of it will drip off, leaving you with really beautiful, intensely flavored tomatoes.
  • If you can get hold of some dried flowering oregano then do, as it has the most heavenly flavor. Feel free to use the dried stuff that you get in a little container, but it can taste a bit like sawdust when compared to the fruity, fragrant flavor you get from the flowering variety. Oregano is also great to grow in the garden.
  • Depending on the size of your tomatoes, slice some in half, some into quarters and others into uneven chunks. Straightaway this will give you the beginnings of a tomato salad that's really brave and exciting to look at and eat. Put the tomatoes into a colander and season with a good pinch of sea salt.
  • Give them a toss, season again and give a couple more tosses. The salt won't be drawn into the tomatoes; instead it will draw any excess moisture out, concentrating all the lovely flavors. Leave the tomatoes in the colander on top of a bowl to stand for around 15 minutes, then discard any juice that has come out of them.
  • Transfer the tomatoes to a large bowl and sprinkle over the oregano. Make a dressing using 1 part vinegar to 3 parts oil, the garlic and the chile. Drizzle the tomatoes with enough dressing to coat everything nicely.
  • This is a fantastic tomato salad, which is totally delicious to eat on its own. It's also great served with some balls of mozzarella or some nice, grilled ciabatta bread.

WARM KALE, COCONUT AND TOMATO SALAD

Warm Kale, Coconut and Tomato Salad image

This stylish recipe for a warm kale salad comes from Anna Jones, a British food stylist who worked for Jamie Oliver before striking out on her own. It appears in her 2015 cookbook, "A Modern Way to Eat," a collection of recipes that anyone who spends as much time as I do snooping around home kitchens can tell you is shaping up as a kind of new-era "Silver Palate Cookbook." (This salad could be Jones's chicken Marbella.) It calls for oven-roasted tomatoes slicked with olive oil and fragrant with lime, as well as kale cooked soft in parts and crunchy in others, the pure mineral intensity of the greens bracketed by soy sauce and shavings of coconut. The dressing - ginger, miso, tahini, honey, olive oil, lime juice and chopped hot pepper - is a far thicker mixture than vinaigrette, one that lends itself better to drizzling over the bowl.

Time 40m

Yield 4 servings

Number Of Ingredients 12

12 ounces cherry tomatoes, approximately 1 pint basket
3 to 4 tablespoons extra-virgin olive oil
Kosher salt and freshly cracked black pepper to taste
2 to 3 limes, well scrubbed if waxed
12 ounces green or purple kale, approximately 2 heads, lower stalks removed and leaves torn into pieces
1/4 cup unsweetened dehydrated shaved coconut
1 tablespoon soy sauce
1 inch fresh ginger root, peeled and grated, approximately 1 tablespoon
1 tablespoon white miso paste
1 tablespoon tahini
1 tablespoon honey
1 red serrano or jalapeño pepper, finely chopped

Steps:

  • Heat oven to 425. Rinse the tomatoes well, dry with paper towels and cut them in half, then place on a sheet pan. Dress with 1 to 2 tablespoons of olive oil, salt, pepper, the zest of 2 limes and the juice of 1 of them. Roast the tomatoes until just blistered and beginning to take on color, approximately 15 to 20 minutes.
  • Meanwhile, mix together the kale, coconut shavings and soy sauce, and place on another sheet pan. Roast these in the oven next to or below the tomatoes for approximately 5 to 10 minutes, or until the kale has begun to crisp at its edges.
  • Make the dressing in a small bowl, combining the grated ginger root, the miso, the tahini, the honey, the pepper, the juice of the second lime and the remaining olive oil. Adjust seasonings to your liking - you may wish to increase the amount of lime juice with a third lime, to thin the dressing.
  • Put the tomatoes and kale into a large serving bowl, and drizzle the dressing over the top, a few tablespoons at a time; you may not need all the dressing if the tomatoes are particularly juicy. Serve warm.

This is a common and colorful side dish for our summer cookouts. It's such a hit that I get complaints if I don't make it. Even the youngsters love this mix of fresh vegetable and light dressing! Regular black olives can be substituted for the Greek olives if you don't care for their flavor.

### Tips
  • Choose ripe, flavorful tomatoes. Look for tomatoes that are deep red in color and have no bruises or blemishes. Avoid tomatoes that are too firm or too soft.
  • Use a variety of tomatoes. To add more flavor and texture to your salad, use a combination of different types of tomatoes, such as cherry tomatoes, grape tomatoes, Roma tomatoes, and beefsteak tomatoes.
  • Slice the tomatoes consistently. This will help the salad look more appealing and make it easier to eat.
  • Add complementary ingredients. In addition to tomatoes, you can add a variety of other ingredients to your salad, such as cucumbers, onions, peppers, and herbs. Be creative and experiment with different combinations to find your favorites.
  • Dress the salad lightly. A simple vinaigrette or olive oil dressing is all you need to enhance the flavor of the tomatoes without overpowering them.
  • Serve the salad immediately. Tomato salad is best served fresh. If you need to make it ahead of time, store it in the refrigerator for up to 2 hours before serving.
### Conclusion Kamuela tomato salad is a refreshing and flavorful dish that is perfect for summer. With its simple ingredients and easy preparation, this salad is a great way to enjoy the bounty of the season. Whether you are serving it as a side dish or a main course, this salad is sure to be a hit. Happy cooking!
