Time 30m

Yield 12

Number Of Ingredients 9

9 medium potatoes, peeled
1 teaspoon salt
3 eggs, beaten
1 cup all-purpose flour
⅔ cup bread crumbs
½ teaspoon ground nutmeg
1 cup butter
2 tablespoons finely chopped onion
¼ cup dry bread crumbs

Steps:

  • Place the potatoes in a large pot with enough water to cover. Bring to a boil, and cook until the potatoes are soft, about 20 minutes. Drain water, and place potatoes into a large bowl. Mash potatoes, leaving them slightly lumpy (just like making mashed potatoes). Mix in the salt, eggs, flour, 2/3 cup of bread crumbs, and nutmeg. Roll into walnut sized balls. If the dough is too sticky, you may want to mix in more flour or bread crumbs.
  • Bring a large pot of lightly salted water to a boil. Gently drop the dumplings into the water. When they come up to the surface, allow them to boil uncovered for 3 minutes. Remove the dumplings with a slotted spoon, and keep warm.
  • While you are waiting for the water to boil, melt the butter in a skillet over medium heat. Add onions and 1/4 cup of bread crumbs. Cook, stirring constantly, until the onions are tender, and the sauce has thickened some. Pour sauce over the dumplings before serving.

Time 1h50m

Yield 2 loaves, 16 serving(s)

Number Of Ingredients 10

1 cup mashed potatoes
1/2 cup soft butter
1/2 cup sugar
3 eggs
1/2 cup potato water
2 (1/4 ounce) packages dry yeast
1 teaspoon salt
1 cup milk
8 cups flour
melted butter

Steps:

  • Peel potatoes and boil until tender. Drain and reserve potato water. Mash potatoes.
  • Cream butter and sugar until well blended. Beat in the eggs one at a time, beating well after each addition.
  • Dissolve yeast in ½ cup of the potato water and add with the mashed potatoes to first mixture. Beat well. Add salt, milk and half of the flour. Beat until smooth. Add enough more flour, a little at a time, to make a stiff dough. Cover and let stand in a warm place until doubled in bulk.
  • Place on a floured board and divide dough in half. Knead well. Shape into 2 loaves and put into greased bread pans (9×5×3). Cover with a towel and let rise for about 1 hour in a warm place until the loaves are nicely rounded.
  • Bake 50 minutes in a preheated 375º oven. As soon as you take the pans out of the oven, brush the tops of the loaves with melted butter.

Tips:

  • Choose the right potatoes: For Kartoffelbr, it's best to use a variety that is high in starch, such as Russet or Idaho potatoes.
  • Cook the potatoes properly: The potatoes should be cooked until they are soft and fluffy, but not overcooked or mushy.
  • Mash the potatoes thoroughly: The potatoes should be mashed until they are smooth and free of lumps.
  • Season the mashed potatoes well: Use salt, pepper, and other seasonings to taste.
  • Let the mashed potatoes cool slightly before forming them into Kartoffelbr:
  • This will help them to hold their shape better.
  • Fry the Kartoffelbr in hot oil: This will help them to get crispy on the outside and fluffy on the inside.
  • Serve the Kartoffelbr with your favorite dipping sauce:
  • Such as ketchup, mayonnaise, or mustard.

Conclusion:

Kartoffelbr is a delicious and versatile dish that can be served as a main course or a side dish. It's a great way to use up leftover mashed potatoes, and it's also a fun and easy dish to make with kids. With a few simple ingredients and a little bit of time, you can create a delicious and satisfying meal that the whole family will enjoy.
