⅓ cup butter, melted
16 oz cream cheese, at room temperature
¾ cup sugar
¼ cup milk
½ cup sour cream
2 tablespoons flour
3 teaspoons bourbon whiskey, divided
2 eggs
1 cup dark brown sugar
¼ cup cornstarch
½ teaspoon salt
4 egg yolks
⅔ cup maple syrup, or dark corn syrup
½ cup cream, warm to the touch
4 tablespoons butter, cold
2 cups roasted pecan, chopped
whole roasted pecan, to serve

Steps:

  • Preheat oven to 325°F (170°C).
  • In a bowl, combine the graham cracker crumbs and melted butter. Stir to combine.
  • Pour the mixture into a 9-inch (23 cm) springform pan and press it evenly into the bottom and halfway up the sides. Transfer to the refrigerator to chill.
  • In a large bowl add the cream cheese, sugar, and milk. With a hand mixer, beat until fluffy and fully incorporated.
  • Add in the sour cream, flour, 2 teaspoons of the bourbon, and the two eggs and gently continue to mix until the cream cheese filling is smooth.
  • Pour the mixture into the springform pan with the graham cracker crust and bake for 1 hour, or until the cheesecake no longer jiggles.
  • While the cheesecake is cooking, prepare the stove-top pecan pie filling.
  • In a bowl combine the brown sugar, cornstarch, and salt, stir together and pour into a medium saucepan on low heat.
  • Pour in the egg yolks, maple syrup, and warm cream and whisk until smooth.
  • Cook on low heat until the mixture thickens like a pudding, 5-10 minutes. Remove from the heat.
  • Stir in the cold butter and the final teaspoon of bourbon and whisk until fully emulsified. The pudding-like mixture should be around room temperature.
  • Fold in the roasted, chopped pecans and then pour the mixture over the cooked cheesecake and spread it out as an even layer.
  • If you like, sprinkle with extra chopped pecans or garnish with whole pecans.
  • Let the cheesecake chill in the refrigerator until completely set.
  • Slice and serve cold or at room temperature.

1 1/4 cups all-purpose flour
1 teaspoon sugar
1/2 teaspoon kosher salt
1/4 teaspoon baking powder
8 tablespoons (1 stick) cold unsalted butter, cut into small pieces
2 tablespoons bourbon
Ice water, as needed
1 cup coarsely chopped walnut halves
1/2 cup semisweet chocolate chips
3/4 cup packed dark brown sugar
1/2 cup all-purpose flour
6 tablespoons unsalted butter, melted
1/2 teaspoon kosher salt
1/3 cup light corn syrup2 tablespoons bourbon
1 teaspoon vanilla extract
2 large eggs
1/2 cup hot water
1 teaspoon baking soda
Whipped cream, for serving, optional

Steps:

  • 1. Pulse the flour, sugar, salt and baking powder in the bowl of a food processor until combined. Add half of the butter and pulse until the mixture resembles fine cornmeal. Add the remaining butter and continue pulsing until it is the size of small peas. Add the bourbon and pulse until moistened. Pour in 1 to 2 tablespoons ice water, a bit at a time, until the dough just comes together and holds its shape when squeezed. Turn the dough out onto a large sheet of plastic wrap, gather into a disc and wrap well. Chill until firm, at least 1 hour or overnight.
  • 2. Preheat the oven to 350 degrees F. Roll out the dough on a lightly-floured surface to an 11-inch circle and fit into a 9-inch pie plate, crimping the edges. Chill to set the crust, 20 minutes.
  • 3. Prick the bottom and sides of the crust with a fork. Fit the crust with aluminum foil and weigh it down with pie weights or dry beans. Bake until the edge of the crust is just golden, 20 to 25 minutes. Remove the foil and weights and continue to bake until the bottom of the crust is lightly golden and no longer shiny, 10 to 15 minutes longer. Cool completely.
  • 1. Pour the walnuts and chocolate into the bottom of the cooled crust. Combine the sugar, flour, butter and salt in a small bowl until smooth and set aside. Lightly whisk together the corn syrup, bourbon, vanilla and eggs in a large bowl. Stir together the hot water and baking soda before whisking into the egg mixture. ¼ cup Maker's Mark® Bourbon
½ cup all-purpose flour
1½ cups walnuts, toasted and coarsely chopped
1 cup semi-sweet chocolate chips

Steps:

  • 1. To make the crust: In a food processor, pulse the flour, salt, and sugar to mix. Add the butter and pulse until the mixture resembles coarse meal with pea-sized pieces. Sprinkle the ice water on top and pulse until large clumps form. Press the dough into a disk, wrap tightly in plastic wrap, and refrigerate until firm, about 1 hour. 2. On a lightly floured work surface, roll the dough into a 12-inch round. Fit into a 9-inch pie dish. Tuck in the overhang and decoratively crimp the edges. Freeze while heating the oven. 3. Preheat the oven to 350°F. Prick the bottom of the dough all over with a fork. Line with parchment paper and fill with pie weights or dried beans. Bake until the is golden and dry, about 20 minutes. 3/4 cup egg substitute
1 teaspoon vanilla
1/2 cup pecan halves or 1/2 cup broken pecans
1/2 cup oats (old-fashionedquick quicking oats)
1 (6 ounce) bag semi-sweet chocolate chips (1 cup)

Steps:

  • In medium bowl, mix 1 cup flour and the salt. Cut in shortening, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost cleans side of bowl (1 to 2 teaspoons more water can be added if necessary.
  • Gather pastry into a ball. Shape into flattened round on lightly floured surface. Wrap in plastic wrap; refrigerate about 45 minutes or until dough is firm and cold, yet pliable. This allows the shortening to become slightly firm, which helps make the baked pastry more flaky. If refrigerated longer, let pastry soften slightly before rolling.

  • In large bowl, beat sugar, margarine, corn syrup, bourbon, salt, egg product and vanilla with wire whisk or hand beater. Stir in pecans, oats and chocolate chips. Pour into pastry-lined pie plate. Cover edge with 2- to 3-inch strip of foil to prevent excessive browning.
  • Bake 40 to 50 minutes or until crust is brown and filling is set, removing foil for last 15 minutes of baking. Cool 30 minutes. Refrigerate until chilled, about 2 hours.

I have never been to the Kentucky Derby nor do I know anything about it, but I have had this recipe for a very long time. It is an awesome pie.Melted chocolate chips and walnuts with a light crust on top. Please try it sometime.The picture doesn't justify the taste! I like mine slightly warm.

  • 1. Preheat oven to 350 F. Mix the sugar and flour. Add the beaten eggs, the the melted, cooled butter. add Walnuts, chocolate chips and vanilla.
  • 2. Pour into pie shell and bake 30 to 40 minutes, or until a toothpick inserted in the center comes out almost clean.

1 1/2 Tbsp flour
1 Tbsp cornmeal
1/8 tsp salt
3 large eggs
1/2 c melted butter (one stick)
3 Tbsp milk/cream
1 tsp vanilla extract
1 1/2 tsp white vinegar
1 1/3 single pie crust

Transporting multiple pies to social functions and storage was a challenge . so they stacked. Upon cutting .. Cut thin slices. Its very rich and makes Paula Dean seem like a butter...

4-5 pie shells
5 eggs
1 egg yolk
3 c sugar
1 1/2 c melted buttery
1 c cream
ICING
2 c brown sugar
1 c cream

Steps:

  • 1. Beat eggs well and cream in sugar beat well
  • 2. Add butter and cream beat well
  • 3. Pour 1 cup into each pie crust. The pie that will be on the bottom fill with a little more filling.
  • 4. Bake 350° about 45 minutes or until It is bubbly and almost set
  • 5. Cool pies in pans. Once fully cooled remove from pans . it may take a knife around edges. I admit store bought is easier . don't worry about broken edges they get trimmed
  • 6. Place fullest pie on bottom and stack others on top
  • 7. Trim pie crust edges off.
  • 8. Icing Cook 2 cups brown sugar and cream until soft ball stage. It will be brown and bubbly. A bit on a spoon when dunked in cold water will form a blob
  • 9. Beat until creamy. This can take a few minutes depending on your mixer.
  • 10. Ice the stacked pies. If icing hardens while icing mix in a wee bit of cream in very small amount.

Tips:

  • Use fresh, ripe fruit for the best flavor. Overripe fruit can be too soft and mushy, while underripe fruit can be tart and lack flavor.
  • Don't overmix the batter. Overmixing can make the pie tough. Mix just until the ingredients are combined.
  • Bake the pie until the crust is golden brown and the filling is bubbling. This usually takes about 45-50 minutes.
  • Let the pie cool for at least 30 minutes before serving. This will help the filling to set and the crust to cool down.
