KEY WEST CHICKEN KABOBS
You can cook these under the broiler. For variation, try marinating shrimp, (which will take 2-4 minutes to grill or broil in all!) Serve with fresh salad, steamed veggies, baked potato or any of your favorite sides.

Steps:
- Preheat the grill to 375 degrees F.
- Add the olive oil, Italian seasoning, 1 teaspoon salt and 1/2 teaspoon pepper to a large bowl and whisk to combine. Add the salmon, red onion, and lemon quarters to the bowl and gently toss to coat.
- To assemble the kebabs, thread a few pieces of red onion onto an 8-inch-long metal skewer (see Cook's Note). Next, add a piece of salmon, followed by a quarter of lemon. Continue threading the ingredients onto the skewer until you have 4 pieces of salmon on the skewer. Set the finished kebab aside and continue the process with the remaining skewers and ingredients.
- Generously oil the grates of the preheated grill. Add the salmon kebabs to the grill and cook, turning halfway through, until nice grill marks have formed, and the salmon easily releases from the grill, 4 to 6 minutes. (This can alternatively be done on an indoor grill pan.)
- Remove the salmon to a serving platter and drizzle with the Herb Sauce. Serve with lemon wedges.
- Add the olive oil, lemon zest, lemon juice, red pepper flakes, garlic and 1/2 teaspoon salt to a small food processor fitted with the blade attachment. Pulse until the garlic is finely chopped. Add the basil and parsley leaves and blend until finely chopped. Transfer the herb sauce to a bowl to serve with the grilled salmon.
Tips:
- Choose the right skewers. Bamboo skewers are the most common type of skewer, but you can also use metal skewers. If you're using bamboo skewers, be sure to soak them in water for at least 30 minutes before using them. This will help to prevent them from burning.
- Cut your ingredients into uniform pieces. This will help them to cook evenly.
- Don't overcrowd the skewers. Leave some space between the pieces of food so that they can cook evenly.
- Cook the skewers over medium heat. This will help to prevent the food from burning.
- Turn the skewers frequently. This will help to ensure that the food cooks evenly.
- Don't overcook the food. Overcooked food is tough and dry.
- Serve the skewers immediately. They're best when they're hot off the grill.
Conclusion:
Key West kabobs are a delicious and easy-to-make dish that's perfect for any occasion. They're a great way to use up leftover chicken, shrimp, or vegetables. You can also experiment with different marinades and sauces to create your own unique flavor combinations. So next time you're looking for a quick and easy meal, give Key West kabobs a try.
