1/2 c mayonnaise ( prefer hellmanns)
1/3 c sugar granulated
1/3 c milk
1/3 c buttermilk (you can sub with 2 teaspoon sour cream)
2 Tbsp lemon juice fresh or real lemon from bottle
1 1/2 Tbsp white vinegar
1/2 tsp salt
1/8 tsp pepper
1 medium head of cabbage grated very fine
1/4 c carrots, grated very fine
2 Tbsp sweet onion minced very fine

Steps:

  • 1. Shred or mince cabbage, carrots and onions very fine, to size of a grain of rice.
  • 2. Mix mayo, sugar, milk, buttermilk or sour cream, lemon juice, white vinegar, salt and pepper until smooth.
  • 3. Add sauce to the well mixed and well distributed cabbage, carrots and onion. Stir and incorporate well.
  • 4. Place in refrigerator and allow at least 2 hours before serving. Best if allowed to set in fridge overnight.
  • 5. Note: A food processor works best for mincing the veggies. The alternative is the smaller holes of a handheld shredder. Yields about a quart and a half.
  • 6. As I noted, much of the appeal of KFC's slaw is the texture as well as the flavor. Enjoy!

Beat until smooth Add cabbage, carrots, and onions. Mix well. Cover and refrigerate for at least 2 hours, if you let it sit over night it's even better :)
