1 egg
1/3 cup sugar
1/3 cup brown sugar
1 cup milk
1 1/2 cups flour
1 tablespoon baking powder
1/4 teaspoon salt
1/2 cup mini chocolate chips

Steps:

  • Preheat oven to 375 degrees F. Line mini muffin tins with paper cups. In a mixer with a whip attachment, mix together the peanut butter, egg, and sugars until smooth. • Mash Sweet Potatoes: Microwave sweet potatoes to soften, then mash until smooth.
  • Use Coconut Oil: Coconut oil is a healthier alternative to butter and adds a subtle sweetness.
  • Choose Dark Chocolate Chips: Dark chocolate with a higher cacao percentage is healthier and adds a rich flavor.
  • Mini Muffin Pan: Use a mini muffin pan to create bite-sized, perfect-for-kids muffins.
  • Fill Muffin Cups: Fill liners only about 2/3 full to prevent batter from overflowing during baking.
  • Toothpick Test: To check for doneness, insert a toothpick into the center; if it comes out clean, the muffins are done.
