I grew up asking for sauerkraut instead of candy as a child, and my grandfather always made it for me. This is my version of what he would make.

1/2 cup butter
1 medium onion, diced
2 garlic cloves, minced (four if you are a garlic lover)
1/2 teaspoon thyme leaves
1/4 teaspoon ground sage
ground black pepper, to taste
3 potatoes, peeled and diced (try to use a waxy potato like Yukon gold (russets will disintegrate in the baking process)
1 (16 ounce) bag sauerkraut, from the deli aisle (not canned please)
1 lb beef kielbasa, cut into 1/2 inch pieces (two if you're an insane sausage lover)

Steps:

  • Put the cold butter in a cold pan with the diced onion, and slowly bring to a simmer on medium heat.
  • This brings out the sweetness of the onions.
  • Simmer for about 10 minutes.
  • Add minced garlic and simmer 2 more minutes.
  • Add next 3 ingredients.
  • Combine with the sauerkraut (undrained and not rinsed), kielbasa and potatoes.
  • Bring to a simmer on the stove top.
  • Cover loosely with foil and place in a preheated 225°F oven for 3 hours.

1 1/2 pounds smoked Polska kielbasa
2 tablespoons butter
3 tablespoons sugar
1 onion, sliced
3 cups sauerkraut, drained
3 tablespoons freshly chopped parsley leaves
Honey Mustard Dipping Sauce, recipe follows
1/4 cup yellow mustard
1/4 cup honey
1/4 cup Dijon mustard
1/2 teaspoon cayenne
1 tablespoon prepared horseradish
Pinch salt
Pinch cracked black pepper

Steps:

  • Preheat grill. Preheat oven to 400 degrees F.
  • Cut kielbasa into 3-inch lengths and butterfly lengthwise. Place on hot grill and cook for 4 to 5 minutes on each side turning frequently, charring all sides. Remove from grill. Transfer kielbasa to a baking sheet and place in oven to cook for another 5 to 6 minutes.
  • In a large skillet over medium-high heat, add butter and sugar. Allow sugar to cook to a golden brown color. Add onions and cook until caramelized. Stir in the sauerkraut and cook for 5 to 6 minutes until onions and sauerkraut are wilted and colored.
  • Remove kielbasa from oven and cut into 1-inch pieces. Add to pan of sauerkraut and onions. Toss together and cook for 1 minute. Transfer to a platter, garnish with parsley and serve with Honey Mustard Dipping Sauce.
  • In a small bowl, mix all ingredients until well combined.

1 apple - peeled, cored, and diced
½ cup beer
½ teaspoon sea salt

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add bacon; cook until crispy, 8 to 10 minutes. Pull bacon out with tongs and set in a bowl. Add kielbasa to the pot; lightly brown on all sides, 5 to 7 minutes. Remove with tongs and place in the bowl with the bacon.

  • Preheat oven to 250°F.
  • Pat sauerkraut dry between paper towels to remove as much moisture as possible, then transfer to a bowl and stir in eggs, flour, scallion greens, salt, and pepper until combined.

  • Preheat a grill to medium-high (if you are using a charcoal grill, coals are ready when you can hold your hand 5 inches above grill for just 3 to 4 seconds). Using your hands, remove about 1/2 cup bread from each side of the loaf. Brush hollowed-out sides of bread with oil.

1 package (16 ounces) ready-to-serve original Italian pizza crust (12 inches in diameter)
2 tablespoons Dijon-mayonnaise blend
1 can (8 ounces) sauerkraut, drained
1/4 pound fully cooked kielbasa sausage, cut lengthwise in half, then cut crosswise into slices
4 medium green onions, sliced (1/4 cup)
1 cup shredded Swiss cheese (4 ounces)

Steps:

  • Heat oven to 425°.
  • Place pizza crust on ungreased cookie sheet. Spread with Dijon-mayonnaise blend. Top with sauerkraut, sausage, onions and cheese.

I got this recipe from my sister-in-law. It is a family favorite. Very simple and easy to do yet has good flavor and tastes great.

1 -2 lb polska kielbasa (the smoked type, adds the flavor to potatoes and kraut while cooking)
1 (14 1/2 ounce) can sauerkraut
3 (15 ounce) cans of whole potatoes

Steps:

  • Pour the large can or jar of sauerkraut, with juice, on one side of crock pot.
  • Drain 2 cans of potatoes and put on other side of crockpot.
  • Pour the other can of potatoes with juice inches.
  • Cut up meat into small chunks and put on top.
  • This must go for 10 hours on low (at the least) for the flavor of the meat to get to potatoes.
  • I substitute large can of sauerkraut with my own homemade and substitute the potatoes with one quart jar of my canned potatoes with a little of juice.

Tips:
