Number Of Ingredients 7

3 lbs. sweet potatoes
3/4 c. light brown sugar, packed, divided
3 T. butter
1/2 t. cinnamon
1/2 t. nutmeg
1/4 t. salt
1 can evaporated milk

Steps:

  • Preheat oven to 350 degrees. Grease a 1 1/2 quart casserole. Cook sweet potatoes in boiling salted water until done; drain, peel, and cut into large chunks (about 1" square). Put into the casserole. Mix all of the remaining ingredients. Pour the liquid ingredients over the sweet potatoes. Bake for 30 minutes.

Tips:

  • Choose the right sweet potatoes: Look for firm, unblemished sweet potatoes with smooth skin. Avoid any potatoes that are soft or have cuts or bruises.
  • Wash the potatoes thoroughly: Scrub the potatoes under running water to remove any dirt or debris. Pat dry with a clean towel.
  • Pierce the potatoes: Before baking, pierce the potatoes all over with a fork. This will help them cook evenly and prevent them from bursting.
  • Bake at a high temperature: Bake the potatoes at 400°F (200°C) for 45 minutes to 1 hour, or until they are tender when pierced with a fork.
  • Let the potatoes cool: Allow the potatoes to cool slightly before handling them. This will make them easier to peel and mash.
  • Season to taste: Once the potatoes are mashed, season them with salt, pepper, and any other desired spices or herbs. You can also add butter, milk, or cream for a richer flavor.

Conclusion:

Sweet potatoes are a versatile and delicious vegetable that can be enjoyed in many different ways. Whether you bake them, mash them, or fry them, sweet potatoes are sure to be a hit. With their naturally sweet flavor and high nutritional value, sweet potatoes are a healthy and satisfying addition to any meal.
