2 tablespoons butter
2 tablespoons olive oil
4 cloves garlic, minced or pressed
1/2 medium onion, finely diced
1 pound peeled and deveined large shrimp (16/20 count)
2 lemons, halved
1/2 cup white wine
4 dashes hot sauce (I used tabasco), or more to taste

8 ounces angel hair pasta
1/2 cup grated Parmesan
Minced fresh parsley, for topping

Steps:

  • Boil water for the pasta and have it ready.

Add the shrimp, then stir and cook for a couple of minutes. Squeeze in the lemon juice. Add the wine, hot sauce, salt and pepper. Stir and reduce the heat to low.
  • Throw the angel hair pasta into the boiling water. Cook until just al dente. Drain, reserving a cup or 2 of the pasta water.

This is always a hit. The best part is how fast you can whip it up! You could just buy roasted tomatoes in a jar, but I think roasting them yourself gives the dish a very fresh, deep flavor.

Tips:

  • Use fresh shrimp. Fresh shrimp has a sweeter, more delicate flavor than frozen shrimp. If you're using frozen shrimp, thaw it in the refrigerator overnight or under cold running water for 30 minutes.
  • Don't overcook the shrimp. Shrimp cooks quickly, so it's important to not overcook it. Overcooked shrimp will be tough and rubbery.
  • Use a good quality olive oil. Olive oil is the traditional fat used in scampi, and it adds a delicious flavor to the dish. Make sure to use a good quality olive oil, such as extra virgin olive oil.
  • Add some flavor to the scampi. There are many ways to add flavor to scampi, such as by adding garlic, shallots, white wine, lemon juice, or herbs. You can also add a pinch of red pepper flakes for a little spice.
  • Serve scampi immediately. Scampi is best served immediately after it's cooked. This will ensure that the shrimp is still tender and juicy.

Conclusion:

Shrimp scampi is a delicious and easy-to-make dish that's perfect for a weeknight meal. It's also a great dish to serve at a party or potluck. With a few simple ingredients and a little bit of time, you can create a delicious and impressive meal that everyone will love.
