KITTENCAL'S WHITE SAUCE/ROUX
This is a basic white sauce or roux and can be used in so many different recipes, the thickness of the sauce depends on the proportion of flour and butter --- for a *thin* sauce decrease butter and flour to 2 tablespoons, for a *thick* sauce increase butter and flour to 5 tablespoons the amounts may be reduced to half for 1 cup.

Steps:
- For stovetop; melt butter in a heavy-bottomed saucepan over medium heat.
- Add in flour stirring/whisking constantly for 1 minute.
- Slowly add in cream or milk stirring/whisking constantly until bubbly and thickened.
- Season with salt and pepper.
- For microwave; place butter into a 6 to 8-cup liquid Pyrex measuring cup.
- Microwave on HIGH for 45 seconds or until thickened.
- Add in flour stirring until smooth.
- Gradually add in cream or milk; stir/whisk well.
- Return to microwave and cook on HIGH for about 4 minutes or until thickened and bubbly (stirring after 2 minutes and then at 1 minute intervals).
- Stir in salt and pepper.
- Remove from heat use immediately, or to cool the sauce for later use, cover the sauce directly with wax paper to prevent a skin from forming.
- VARIATIONS;.
- Veloute sauce; substitute 2 cups chicken or beef broth for the cream.
- For cheese sauce; stir in 2 cups old cheddar cheese and 1/4 teaspoon dry mustard with the salt and pepper.
KITTENCAL'S BAKED POTATO CASSEROLE (RECIPEZAAR) RECIPE

- TO SERVE HOT AS A CASSEROLE grease a 13 x 9-inch baking dish (or use a casserole dish that will hold the mixture). Set oven to 350 degrees F. In a large bowl, mix mayonnaise, sour cream and melted butter, garlic powder, seasoned salt and black pepper until well combined. Mix in green onion and yellow onion. Add in the cooked cubed potatoes, cubed cheese and ham (if using) mix with a large spatula until well combined. Transfer/spread the mixture to prepared casserole dish. At this point you may cover and refrigerate for up to 24 hours until ready to bake. Bake 25-30 minutes or until hot and bubbly. Remove from oven and sprinkle the grated cheddar on top; return to oven and bake 5-8 minutes more or until the cheese has melted. TO SERVE AS A COLD POTATO SALAD make as stated in steps 3-5 reducing the melted butter to 2 tablespoons. Place in a bowl, cover and refrigerate for at least 4 hours or more before serving.
KITTENCAL'S OLD FASHIONED WHITE BREAD
This recipe goes back years and I still make it today, the dough is a pleasure to work with and always produces a soft high delicious loaf of bread --- sometimes it's not the ingredients but the method used, I have been baking bread for long enough to know all the secrets, follow the directions and I think you will be very pleased with this bread! --- Canadian members use all purpose white flour, for U.S. members use white bread flour --- I suggest to make this with a heavy-duty stand mixer but if you do not have one this can be made by hand --- just a tip, to create a perfect rising temperature for yeast bread/buns, just before you start making the recipe turn your stove on to 200 degrees F and leave it on for a couple of minutes then turn it off, you can rise your dough in the oven, works every time, but don't forget to turn the oven off or you will have to rise it at room temperature lol! --- this dough can be used for many different recipes, it makes a wonderful cinnamon-raisin swirl bread --- for pan greasing see my recipe#78579

Steps:
- Fit a heavy-duty stand mixer with kneader blade.
- In a small saucepan scald 1/2 cup milk with 2 tablespoons sugar and 2 teaspoons salt until very warm stirring with a spoon until no sugar or salt granules remain; set aside until luke-warm (for faster cooling place in the fridge for about 15-20 minutes on your top fridge shelf).
- Place 4 cups white flour and 3 tablespoons shortening (or lard) in the stainless steel mixing bowl along with the warm milk mixture; cover bowl with a towel to keep the milk warm.
- In a cup mix together 1-1/4 cups warm water with 2 teaspoons sugar, mix with a spoon until the sugar is dissolved; add in 1 tablespoon plus 1/2 teaspoon dry yeast, stir with a spoon for about 15 seconds.
- Place a towel over the cup and proof for about 8-10 minutes or until foamy.
- Place the water/yeast mixture in the bowl.
- Start mixing/kneading add in more flour as needed to create a soft smooth dough (about 8 minutes).
- Remove the dough to a very lightly floured surface; cover with a clean tea towel and let rest for about 5-8 minutes.
- Gather up the dough and shape into a ball, then place in a large well greased bowl.
- Cover with plastic wrap and let rise in a warm place for about 1 hour (I use my oven!).
- Punch down the dough and place on a surface.
- Using hands (not a rolling pin) flatten to a 10 x 14-inch rectangle (trust me this dough will shape beautifully, no need for a rolling pin!).
- Roll the dough up tightly then seal the long seam.
- Using a knife slice off the dough ends just enough to fit into your 8x4-inch pan, then pinch the dough ends together to seal (you can shape the two ends in a ball and freeze to make buns or discard the dough).
- Place in a dark metal 8 x 4-inch bread pan.
- Cover and let rise in a warm place for about 30-40 minutes or until doubled.
- Bake in a 375 degree oven for about 25 minutes, or until golden brown.

- Set oven rack to second-lowest position.
- Spray pan with cooking spray (13 x 9-inch baking pan or for a sheet cake use a 10 x 15-inch sheet pan).

- In a skillet, melt the butter with oil over medium-high heat; add the sliced onions then sprinkle the sugar over the onions; cook stirring with a wooden spoon for about 20-25 minutes or until onions become golden brown and tender (depending on the size of your skillet try not to use more than 4 onions at a time or they will not caramelize properly).

KITTENCAL'S CAESAR VINAIGRETTE
This is my non-creamy version of a Caesar dressing, and is another favorite that I use for dinner parties when I make a special dinner. Plan ahead this dressing needs to chill for 6 hours to blend flavors, don't make the mistake by adding in too much fresh garlic in this recipe less is best as the garlic flavor will intensify dramatically overnight. Adjust all ingredients to taste. The Parmesan is only optional I like to add it in. Also you could add in one uncooked egg yolk if desired for a richer dressing. Cooking time is 6 hours chilling time.
