9 graham crackers
4 tablespoons unsalted butter, melted
2 (8-ounce) packages reduced fat cream cheese, room temperature and cut into 1-inch cubes
3/4 cup granulated sugar
3 tablespoons fresh lemon juice
1 tablespoon grated lemon zest
2 large eggs
2 to 3 kiwis, sliced for topping

Steps:

  • Preheat oven to 350ºF. In a food processor, break the graham crackers and pulse until finely ground. Add the melted butter and process until the mixture reaches a wet sand consistency. Transfer the crumbs to an 8×8-inch baking pan. Press the crumbs out firmly and equally over the bottom of the pan and set aside. In a large mixing bowl, add cream cheese, sugar, lemon juice, and lemon zest and blend until smooth with an electric mixer, about 30 seconds. Scrape the mixture down the sides of the bowl and add the eggs. Blend until combined and smooth, about 20 seconds and scrape the sides of the bowl again. CITRUS GLAZE:
6 tablespoons sugar
2 teaspoons cornstarch
1/2 cup cold water
1/4 teaspoon orange extract
TOPPING:
2 packages (8 ounces each) cream cheese, softened
2/3 cup sugar
1-1/2 teaspoons orange extract
4 kiwifruit, peeled
14 fresh strawberries, halved

½ cup white sugar
1 teaspoon baking powder
