Blend fresh kiwi with lime juice and freeze for a summertime treat.

6 kiwi fruits, divided
½ cup white sugar
½ cup fresh lime juice

Steps:

  • Cut 5 kiwi in half crosswise and scoop flesh from skins with a spoon. Blend with sugar and lime juice in a blender until pureed, about 15 seconds.
  • Transfer to a measuring cup with a spout and pour into 6 (3-ounce) flat ice pop molds, dividing evenly.
  • Peel remaining kiwi and thinly slice crosswise into 12 slices. Submerge 2 slices in each mold, arranging them so 1 slice presses against each of the mold's wider sides. Cover molds, insert sticks between the slices, and freeze until solid, at least 4 hours and up to 2 weeks.

1/3 cup sugar
2 cups kiwi puree (from about 8 kiwis)

Steps:

  • In a small saucepan, bring sugar and 1/3 cup water to a boil over high, stirring until sugar dissolves. Transfer to a 4-cup liquid measuring cup or medium bowl and refrigerate until cool, 30 minutes. Stir in puree. Transfer to ice-pop molds and freeze according to manufacturer's directions.

½ cup pineapple, small-diced, divided, plus 2 tablespoons
½ cup kiwi, skins removed, divided
18 fresh mint leaves, divided, plus 1 whole sprig
1 large lime, juiced
1 tablespoon simple syrup
1 ½ oz Captain Morgan® Original Spiced Rum
ice, for shaking and serving
soda water, for serving
1 lime wheel, for garnish
1 pineapple wedge, for garnish

Steps:

  • In a cocktail shaker, muddle ¼ cup (70 g) pineapple, ¼ cup (70 g) kiwi, 10 mint leaves, and the lime juice until puréed as much as possible. Add ice, the simple syrup, and Captain Morgan® Original Spiced Rum, and shake until mixed together and chilled.
  • Fill a tall glass with ice, then add the remaining ¼ cup plus 2 tablespoons pineapple, ¼ cup kiwi, and 8 mint leaves. Strain the cocktail into the glass and top with soda water.
  • Garnish with the sprig of mint, lime wheel, and pineapple wedge.

1 large orange, zested and juiced
2 tablespoons white sugar
1 tablespoon lime juice
5 cups diced seedless watermelon
2 kiwis, peeled and sliced

Steps:

  • Combine tequila, orange zest, orange juice, sugar, and lime juice in a shallow 9x13-inch dish. Stir in diced watermelon and refrigerate for 2 hours, stirring occasionally.
  • Remove watermelon mixture from the refrigerator and pour into a blender or food processor; process until pureed. Pour into ice pop molds, drop in a kiwi slice, and freeze until firm, 3 hours or overnight.
