2 flour tortillas (10 inches), cut into 1/2-inch strips
3 tablespoons olive oil, divided
1/2 pound boneless skinless chicken breasts, cut into strips
1/2 pound beef top sirloin steak, cut into thin strips
1 medium green pepper, sliced
1 small onion, sliced
2 tablespoons soy sauce
2 teaspoons brown sugar
1/2 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon pepper
1 teaspoon cornstarch
2 tablespoons lime juice
1 cup cubed fresh pineapple
1 medium tomato, coarsely chopped

Steps:

  • In a large skillet, fry tortilla strips in 2 tablespoons oil on both sides for 1 minute or until golden brown. Drain on paper towels. , In the same skillet, cook the chicken, beef, green pepper, onion, soy sauce, brown sugar, chili powder, cumin and pepper in remaining oil for 3-4 minutes or until chicken is no longer pink. , In a small bowl, combine cornstarch and lime juice until smooth; add to the pan. Bring to a boil; cook and stir for 1 minute or until thickened. Stir in pineapple and tomato; heat through. Serve with tortilla strips.

1/2 ounce ranch dressing mix (the powder kind, use half the pack)
1/2 cup mayonnaise
1/2 cup milk
2 tablespoons lime juice
1 garlic clove, roughly chopped (I use chopped garlic in the jar, Polaner brand)
1 bunch cilantro, roughly chopped
1/4 cup green chili salsa

Steps:

  • Place ranch dressing mix, mayo, milk, lime juice, garlic, and green salsa in a blender.
  • Blend the sauce until smooth.
  • Add the cilantro and continue to blend until smooth.
  • Place in refrigerator for several hours to allow it to thicken and the flavors to come together.

Fajitas are easily my family's favorite! The Knorr® Mango Fajita Skillet takes it up a few notches with the surprise burst of sweet mango and the amazing flavors of Knorr® Mexican Rice. Your family will love this on its own, or served on flour tortillas with a dollop of sour cream!

1 (1 pound) flank steak
½ cup lime juice, divided
3 tablespoons extra-virgin olive oil, divided
2 cloves cloves garlic, minced, divided
1 sweet onion, thinly sliced
1 red bell pepper, thinly sliced
1 jalapeno pepper, diced
2 cups water
1 (5.4 ounce) package Knorr® Fiesta Sides™ - Mexican Rice
1 large ripe mango - peeled, seeded, and cut into cubes
¼ cup cilantro, minced
salt and pepper to taste
1 flour tortillas
1 teaspoon sour cream

Steps:

  • Place lime juice, 1 tablespoon extra-virgin olive oil and 1 clove minced garlic into a resealable 1-gallon plastic bag.
  • Pound steak to 1/4 inch thickness; slice into 1/2-inch strips. Place in bag with marinade; seal shut. Turn bag over to distribute marinade. Refrigerate and let marinate for at least 30 minutes.
  • Remove meat from plastic bag; discard marinade.
  • Heat 2 tablespoons olive oil in a large skillet. Add meat; cook and stir until well-browned, about 5 minutes. Add onions, peppers, 1 clove minced garlic, jalapeno, water, 1/4 lime juice and salt and pepper to taste, bring to a simmer.

1 lb beef sirloin steak, trimmed of fat
1/4 cup olive oil
1/4 cup lime juice
2 tablespoons fajita seasoning mix
1 tablespoon fresh oregano, chopped
1 cup red onion, thinly sliced
8 (8 inch) flour tortillas
2 cups mangoes, sliced

Steps:

  • Place steak in a ziploc bag.
  • Stir together oil, lime juice, fajita seasoning and oregano, reserving 2 tablespoons.
  • Pour remaining mixture into bag with meat.
  • Refrigerate for 4-24 hours, turning bag occasionally.
  • Preheat grill to medium.
  • Place onions on an 18-inch square of aluminum foil.
  • Drizzle with reserved lime mixture.
  • Bring up two opposite sides of the foil and seal with a double fold.
  • Fold remaining ends to completely enclose, leaving space for steam to expand.
  • Wrap tortillas tightly in aluminum foil.
  • Drain steaks and discard marinade.
  • Grill steak for 14-18 minutes for medium-rare (or longer to desired doneness).
  • Add package of onions to grill during the last 10 minutes of grilling.
  • Add wrapped tortillas to grill during the last 5 minutes of grilling.
  • Thinly slice meat and serve with onions and sliced mango in warm tortillas.

4 tablespoons canola oil, divided
3 tablespoons lime juice, divided
1-1/2 teaspoons grated lime zest
1 teaspoon chili powder
3/4 teaspoon garlic powder, divided
1/2 teaspoon onion powder
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1/4 teaspoon pepper
2 pounds boneless skinless chicken breasts, cut into thin strips
1/2 teaspoon salt
1 large sweet red pepper and large green pepper, thinly sliced
1 medium onion, thinly sliced
16 corn tortillas (6 inches)
Lime wedges

Steps:

  • In a bowl or shallow dish, combine 2 tablespoons oil, 2 tablespoons lime juice, zest, chili powder, 1/2 teaspoon garlic powder, onion powder, cumin, cayenne pepper and pepper. Add chicken and turn to coat. Refrigerate at least 2 hours. , Season chicken with salt. In a 12-in. cast-iron or other heavy skillet, heat 1 tablespoon remaining oil over medium-high heat.
