Time 7h15m

Yield 4 serving(s)

Number Of Ingredients 8

1 olive oil, extra light spray (3 second spray)
4 large lean lamb, leg chop (600g)
2 medium onions, chopped
2 garlic cloves, crushed
1 teaspoon coriander powder
8 whole whole cardamom pods (pods)
1 medium sweet potato (600g)
2 whole stock cube dissolved in 2 cups hot water

Steps:

  • Place lamb, onions, garlic, coriander, cardamom, sweet potato and stock in a 5-litre capacity slow cooker. Season well with salt and pepper. Cover and cook on a low setting for 7 hours. Make sure to split cardamom pods down centre (not all way through) with a large sharp knife. This will help cardamom flavour to infuse in casserole. Unfortunately some of the black seeds may come out during the cooking process, so be careful not to eat them. They aren't at all harmful to your health, just a little full-on in flavour.
  • Serve with steamed green beans or broccoli.

2 whole wheat tortillas
canola oil cooking spray (3 sprays)
1 lb lean ground turkey or 1 lb ground chicken
1 (14 ounce) can tomato sauce
2 teaspoons Tabasco sauce
1 cup low-fat cheddar cheese or 1 cup Mexican blend cheese
1 (16 ounce) can fat-free refried beans
baked corn tortilla chips, crushed
low-fat sour cream (optional)
salsa (optional)

Steps:

  • Lightly spray pan with oil and brown ground turkey. Mix Tabasco with the tomato sauce and pour over the browned turkey. Simmer until slightly thickened.
  • Spray bottom of 9 x 9 casserole (with lid) and cover with the tortilla shells. I tear them and place them so they cover the entire bottom.

  • Cover the top with the crushed chips and remaining cheese.
  • Cover and bake until the cheese is bubbly. Remove the lid and let the cheese brown slightly.
  • Remove from oven and allow to cool for 5 minutes.
  • Great topped with lettuce, sour cream, salsa, diced peppers and onions.

SLOW COOKER SWEET POTATO CASSEROLE WITH PECAN TOPPING

Slow Cooker Sweet Potato Casserole with Pecan Topping image

My niece is allergic to cinnamon, so I came up with this variation of a classic sweet potato casserole with pecans recipe. This recipe is for a 3-quart slow cooker, but it can be easily doubled for a 6-quart slow cooker. I prefer to use fresh mashed sweet potatoes as it makes the recipe less sweet, but canned will also work.

Tips:

  • For a richer flavor, use bone-in lamb shanks. You can also substitute lamb shoulder or leg of lamb, cut into 1-inch cubes.
  • If you don't have a slow cooker, you can brown the lamb and vegetables in a large pot over medium heat, then reduce the heat to low, cover, and simmer for 2 hours.
  • Serve the casserole with a side of mashed potatoes, roasted vegetables, or rice.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.

Conclusion:

This lamb and sweet potato slow cooker casserole is an easy and delicious meal that is perfect for a busy weeknight. The lamb is tender and flavorful, and the sweet potatoes and carrots add a touch of sweetness and crunch. The casserole is also a great way to get your daily dose of vegetables.
