LAMB CHOPS WITH GREENS AND SORREL SALSA VERDE
Provided by Chef Seamus Mullen
Yield 4 Servings
Number Of Ingredients 14
Steps:
- Pat lamb dry; season with salt and pepper. Let sit at room temperature 1 hour.
- Meanwhile, puree sorrel, mint, parsley, lemon zest, red pepper flakes, about 1 garlic clove, and 1/3 cup oil in a blender, scraping down sides as needed, until mixture is smooth. Season salsa verde with salt and pepper; set aside.
- Prepare grill for high heat (or heat a grill pan over high). Grill chops, turning every 2 minutes or so, until well browned and beginning to char and a thermometer inserted into the thickest part registers 125°, 8-10 minutes. Let lamb rest at least 10 minutes.
- While lamb is resting, heat remaining 2 tablespoons oil in a large skillet over medium-high. Cook mushrooms, tossing occasionally, until well browned, about 4 minutes. Transfer to a large plate.
- Reduce heat to medium and add shallot and remaining garlic to skillet. Cook, stirring occasionally, until shallot is softened and starting to brown, about 2 minutes. Add greens; season with salt and pepper. Cook, stirring occasionally, until wilted and bright green, about 2 minutes. Return mushrooms to skillet and toss to combine. Stir in vinegar; season with salt and pepper.
- Stir lemon juice into salsa verde; taste and adjust seasoning with salt and pepper. Serve lamb chops over mustard greens with salsa verde.
- Do ahead: Salsa verde (without lemon juice) can be made 1 day ahead. Cover and chill. Add lemon juice before serving.

Steps:
- Whisk together the olive oil, oregano, dill, mint, garlic, lemon zest and juice, red pepper flakes and salt in a small bowl to form a thick paste. Slather on the lamb chops. Marinate the chops at room temperature up to 2 hours or in the refrigerator for up to 2 days.
- If the lamb was in the refrigerator, let it come to room temperature before grilling.
- Preheat the grill to medium. When the grill is hot, brush the grates with a wire grill brush to loosen any crud. Wipe the grates with an oiled side towel to pick up any loose soot or crud.
- Arrange the lamb chops on the grill. Do not move the chops for 2 to 3 minutes to allow lovely grill marks to form. Rotate the chops 90 degrees to create cross-hatch grill marks and grill for another 2 to 3 minutes. Flip the chops and repeat the process. Remove the chops from the grill to a platter and let rest for 5 to 10 minutes before serving.

LAMB CHOPS WITH RED WINE AND ROSEMARY SAUCE
This recipe for this dish is one that I received a while back, in one of my cooking classes on American Bistro. I have since changed and added some ingredients to suit my taste. It is a lovely dish, that is fairly quick, easy to make and very tasty. Most ingredients are ones you may have on hand. The sauce is a lovely compliment to the lamb. Served with a side of wild rice and a green salad or veggie, it is a perfect dinner.

Tips:
- Choose high-quality lamb chops: Look for chops that are evenly marbled and have a good amount of fat. This will help them stay juicy and flavorful during cooking.
- Season the chops generously: Sprinkle the chops with salt, pepper, and any other desired seasonings before cooking. This will help them develop a delicious crust.
- Cook the chops over high heat: This will help to quickly sear the outside of the chops and lock in the juices. Be careful not to overcook them, or they will become tough.
- Let the chops rest before serving: This will allow the juices to redistribute throughout the meat, resulting in more tender and flavorful chops.
- Make sure the sorrel sauce is well-seasoned: Taste the sauce and adjust the seasonings as needed. You may want to add more lemon juice, salt, or pepper.
- Serve the chops with your favorite sides: Some good options include mashed potatoes, roasted vegetables, or a simple salad.
Conclusion:
Lamb chops with sorrel sauce is a delicious and elegant dish that is perfect for a special occasion. The chops are tender and flavorful, and the sorrel sauce is bright and tangy. This dish is sure to impress your guests.
