  • Herb Salad
  • Toss 1/4 cup each chopped mint, cilantro and scallions with 2 teaspoons lime juice, and salt to taste.
  • Spicy Cucumber
  • Toss 1/2 diced cucumber with 1 1/2 teaspoons sweet Thai chili sauce.
  • Peanut Sauce
  • Pulse 1/2 cup creamy peanut butter, 2 tablespoons coconut milk,1 tablespoon each soy sauce and rice vinegar, 1 1/2 teaspoons finely chopped peeled ginger, 1 teaspoon each Sriracha and honey, and the juice of 1/2 lime in a food processor until smooth.

1 ½ cups shredded taco chicken
1 (16 oz) can refried beans or 1 ½ cups homemade refried beans
1 (10 oz) can Rotel or fire-roasted tomatoes
1 cup frozen corn, thawed (and drained if needed)
1 cup sliced scallions (from about 3 scallions), divided
8 oz sharp cheddar cheese, shredded (about 2 cups)
Remaining ¼ cup sliced scallions
Sour cream
Tortilla chips or Fritos Scoops

Steps:

  • Preheat oven to 400° F. Grease a 2-quart baking dish. Grease a large piece of aluminum foil (big enough to cover the dish), and set aside.
  • Spread the cream cheese out in an even layer in the bottom of the dish. Scatter the shredded chicken over the top. Spread the refried beans out on top of the chicken, followed by a layer of each: diced tomatoes, corn, ¾ cup of the scallions, and shredded cheese. Cover the dish tightly with the foil.
  • Bake for 35 minutes, remove the foil, and baked uncovered for another 10 minutes. Allow the dip to cool for 5 minutes before topping with remaining scallions and dollops of sour cream. Serve the dip while still hot.

1/4 cup packed brown sugar
2 teaspoons cornstarch
1/4 cup catsup
2 tablespoons rice vinegar
1 tablespoon Worcestershire sauce
4 -5 drops Tabasco sauce (to taste)
3/4 cup cooked chicken (shredded or chopped)
1/2 cup carrot (grated or finely diced)
1/4 cup unsalted peanuts, chopped
3 tablespoons green onions, sliced, with some tops
2 tablespoons soy sauce
1 tablespoon fresh cilantro, finely chopped
1 tablespoon fresh gingerroot, finely diced
1 teaspoon sesame oil
1 garlic clove, minced
8 ounces cream cheese
1 tablespoon milk

Steps:

  • For the sauce: Combine the water, brown sugar, and cornstarch in a saucepan and mix well.
  • Cook over medium heat until the brown sugar and cornstarch dissolve, stirring frequently.
  • Stir in the catsup, vinegar, Worcestershire sauce, and Tabasco sauce; simmer until thickened, stirring frequently.

Steps:

  • In small bowl, mix topping ingredients. Cover and refrigerate 2 to 4 hours.
