2 whole wheat pita (pocket) breads (6 inch)
Cooking spray
1 container (7 or 8 oz) plain hummus
1 container (6 oz) fat-free Greek plain yogurt
1 tablespoon chopped fresh parsley
1 teaspoon fresh lemon juice
1/8 teaspoon pepper
1 medium plum (Roma) tomato, seeded, chopped
1/3 cup pitted kalamata olives, quartered
1/3 cup finely chopped seeded cucumber
1/2 cup crumbled feta cheese (2 oz)
1/4 cup chopped green onions (4 medium)
1 teaspoon olive oil
1/2 medium cucumber, sliced
1 medium green or red bell pepper, cut into strips

Steps:

  • Heat oven to 350°F. Split each pita bread horizontally to make 2 rounds. Cut each round into 6 wedges. Arrange on ungreased large cookie sheet, rough surface up. Spray with cooking spray (about 5 seconds).
  • Bake 8 to 10 minutes or until golden brown and crisp; cool.
  • Meanwhile, spread hummus on shallow serving platter or in pie plate. In small bowl, mix yogurt, parsley, lemon juice and pepper; spread evenly over hummus. Top with tomato, olives, chopped cucumber, feta cheese and onions. Drizzle with olive oil.

2 cloves garlic, minced
1 teaspoon red wine vinegar
1 teaspoon dried oregano
1 cup tzatziki, Tzatziki
2 tomatoes, seeded and diced
2 green onions, finely chopped
1 cup crumbled feta cheese
10 kalamata olives, pitted and slivered
2 tablespoons chopped fresh parsley
1/4 teaspoon ground pepper

Steps:

  • In a food processor puree together beans, garlic, vinegar and oregano until smooth, adding up to 2 T.

1 medium cucumber, peeled, seeded and chopped

1/2 cup finely chopped seeded cucumber
1/2 cup pitted kalamata olives, coarsely chopped
2 tablespoons chopped green onions (2 medium)
Pita chips, as desired
Sliced cucumbers and bell pepper strips, as desired

Steps:

  • In small bowl, mix yogurt, feta cheese, parsley, lemon juice and salt.

1 pkg 14-oz. package pita bread
olive oil
4 tsp all-purpose greek seasoning
1 lb ground lamb
1 tsp garlic salt
1 16-oz container prepared hummus
1 1/2 c prepared tzatziki sauce (gyro sauce)
1 c iceberg lettuce, shredded
2 medium roma tomatoes, diced
1/2 red onion, diced
1/2 c kalamata olives, chopped
1 4-oz container feta cheese, crumbled

Steps:

  • 1. Preheat the oven to 375 degrees F. Line 1 or 2 baking sheets with foil. Cut the pita rounds into eighths. Split each piece in two and place on the prepared baking sheets, with the inside of the bread facing up. Spray (or drizzle) with olive oil and sprinkle with 2 tsp. of the Greek seasoning. Bake 7-10 minutes or until golden.
  • 2. Meanwhile in a large skillet, brown the ground lamb with the garlic salt and the remaining 2 tsp. Greek seasoning. Drain and set aside.
  • 3. In a shallow 1 1/2 quart (clear) dish, spread the hummus on the bottom. Top with a layer of ground lamb, then the tzatziki. Layer with the lettuce, tomatoes, onion, olives and feta. Serve the dip at room temperature with pita chips.

1 lb. ground lamb or hamburger
1 t. garlic salt
16 oz. hummus (prepared or make your own)
8 oz. feta cheese
1/2 cup greek yogurt
1/2 cut fresh mint
6 T. lemon juice - divided
1/2 red onion chopped
2 med. roma tomatoes
1/2 cup chopped black olives
1 cup shredded lettuce
1 16 oz can chick peas drained, reserve liquid
1/4 c + 2 T. olive oil
1 1 1/2 T. tahini
2 cloves garlic crushed
1/2 t. salt

Steps:

  • 1. Brown ground meat with garlic salt and 2 t. greek seasoning. Drain and set aside. 2. Make Hummus Combine chick peas, 1/4c. reserved liquid, lemon juice, tahini, garlic cloves, salt, olive oil in blender. Blend until smooth. Can add more liquid if necessary 3. Make sauce - In a blender combine yogurt, 1/4 c. olive oil, 4 oz. feta, mint, 3 T. lemon juice, sprinkle with salt and pepper. Blend or process until smooth. 3. Build Dip - In a shallow 1 1/2 quart dish, spread the hummus on the bottom,next top with ground meat, than yogurt sauce. Layer with lettuce, tomatoes, onion, olives and feta. 5. Serve at room temperature with pita chips
