1 14-ounce package pita bread
Olive oil cooking spray
4 teaspoons Greek seasoning
1 pound ground lamb
1 teaspoon garlic salt
1 16-ounce container prepared hummus
1 1/2 cups tzatziki (gyro sauce)
1 cup shredded iceberg lettuce
2 medium roma tomatoes, diced
1/2 diced red onion
1/2 cup kalamata olives, chopped
1 4-ounce container crumbled feta cheese

Steps:

  • Preheat the oven to 375 degrees F. Line 1 or 2 baking sheets with foil. Cut the pita rounds into eighths. Split each piece in two and place on the prepared baking sheet(s), with the inside of the bread facing up. Spray with the olive oil cooking spray and sprinkle with 2 teaspoons of the Greek seasoning. Bake 7 to 10 minutes, or until golden.
  • Meanwhile, in a large skillet, brown the ground lamb with the garlic salt and the remaining 2 teaspoons Greek seasoning. Drain and set aside. In a shallow 1 1/2-quart dish, spread the hummus on the bottom. Top with a layer of ground lamb, then the tzatziki. Layer with the lettuce, tomatoes, onion, olives and feta. Serve the dip at room temperature with pita chips.

12 pita pocket halves
Cooking spray
1-3/4 teaspoons garlic powder, divided
12 ounces cream cheese, softened
1 cup plain yogurt
1 teaspoon dried oregano
3/4 teaspoon ground coriander
1/4 teaspoon pepper
1 large tomato, seeded and chopped
5 pepperoncini, sliced
1/2 cup pitted Greek olives, sliced
1 medium cucumber, seeded and diced
1/3 cup crumbled feta cheese
2 tablespoons minced fresh parsley

Steps:

  • Cut each pita half into three wedges; separate each wedge into two pieces. Place on an ungreased baking sheet. Spritz both sides of wedges with cooking spray; sprinkle with 1 teaspoon garlic powder. , Bake at 350° for 5-6 minutes on each side or until golden brown. Cool on wire racks., Meanwhile, in a small bowl, beat the cream cheese, yogurt, oregano, coriander, pepper and remaining garlic powder. Spread into a 9-in. pie plate. 1 medium seedless cucumber, chopped
1 teaspoon white wine vinegar
2 teaspoons minced fresh mint or 1 teaspoon dried mint
1 carton (10 ounces) hummus
1 medium red onion, chopped
1 cup chopped roasted sweet red peppers, drained
2 packages (4 ounces each) crumbled feta cheese
1/2 cup pitted Greek olives, sliced
2 plum tomatoes, chopped
Optional: Minced fresh parsley and additional minced fresh mint
PITA CHIPS:
20 pita pocket halves
1/4 cup olive oil
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Line a strainer with 4 layers of cheesecloth or 1 coffee filter and place over a bowl. Place yogurt in prepared strainer and cover with edges of cheesecloth. Refrigerate for 8 hours or overnight. In a small bowl, combine the strained yogurt, cucumber, vinegar and mint., Spread hummus in the bottom of a 9-in. deep dish pie plate. Layer with onion, peppers, feta cheese, olives, tomatoes and yogurt mixture. Top with parsley and additional mint if desired. 8 ounces low fat soft cream cheese (sometimes I use 12 oz if I want a thicker dip)
8 ounces plain yogurt, Greek yogurt is the best
1 1/2 tablespoons ground coriander
1 teaspoon dried oregano
1/4 teaspoon ground black pepper
1 teaspoon garlic salt
1 tomatoes, chopped
5 pepperoncini peppers, sliced
1/2 cup sliced kalamata olive, pitted and sliced
1 medium cucumber, seeded and diced
1/3 cup feta cheese, crumbled
1/2 cup chopped fresh curly-leaf parsley
5 pita bread rounds, opened and cut into triangles
olive oil flavored cooking spray
garlic salt

Steps:

  • Mix yogurt, cream cheese and first 4 dried spices until well blended. Spread dip in shallow glass casserole dish or pie plate. Cover and let sit in refrigerator for a few hours if you can.
  • Carefully open the pita breads and cut into triangles, and place on two baking sheets spraying both sides with olive oil spray (or brush a small amt on each one) and lightly sprinkle with garlic salt. If the pita bread will not separate, then just cut them into the wedges and brush a small amount of olive oil onto each side instead of using the olive oil spray. Bake at 350 until just starting to brown on edges, about 10 minutes or so.
  • Peel and seed the cucumber (seed it by cutting lengthwise and running a spoon along the center). Chop finely and layer on top of dip. Follow with diced tomatoes, black olives, pepperoncinis and feta cheese. Top with chopped parsley if desired.

8 ounces prepared hummus
1 1/4 cups plain yogurt, divided
1/2 teaspoon cumin
1/4 teaspoon garlic powder
1/4 teaspoon salt
1 teaspoon lemons or 1 teaspoon lime juice
1 cup seeded and chopped tomato
1 ripe avocado, seeded and chopped
1/2 cup peeled and chopped cucumber
salt & fresh ground pepper, to taste
4 -6 ounces crumbled feta cheese
2 tablespoons minced kalamata olives

Steps:

  • First, strain the yogurt by putting cheesecloth or a paper coffee filter in the bottom of a strainer and pour in all the yogurt but 1/4 cup (reserve for later); let it strain for a couple of hours to thicken it up, or overnight (in the fridge) to make thicker "yogurt cheese" (I prefer it just for a couple of hours; you could also substitute sour cream for the yogurt, if you like).
  • Combine the reserved 1/4 cup of un-strained yogurt with the prepared hummus, then spread mixture on the bottom of a 9 inch pie dish.
  • Combine remaining strained yogurt and cumin and spread over the hummus layer.
  • Toss together the garlic powder, salt, lemon/lime juice, chopped tomatoes, and avocado, then spread over the yogurt layer.
  • Add a layer of the cucumbers and sprinkle with a bit of salt and pepper.
  • Add a layer of feta, then finish it all off with olives.
  • Let chill for an hour before serving with pita chips (artichoke hearts are a good addition to this recipe, as well.).
