3 packages (8 ounces each) cream cheese, softened
1 cup crumbled feta cheese
1 jar (8 1/2 ounces) oil-packed sun-dried tomatoes, chopped and well drained
1 container (8 ounces) hummus
1/2 cup chopped seeded unpeeled cucumber
1/2 cup coarsely chopped and well drained pitted Kalamata or Greek olives
Pita bread wedges or toasted baguette slices, if desired

Steps:

  • Place cream cheese and feta cheese in food processor. Cover and process until blended. Divide into thirds (about 1 cup each).
  • Line 5-cup mold or loaf pan, 8 1/2x4 1/2x2 1/2 inches, with plastic wrap. Spoon one-third of the cheese mixture in bottom of mold; smooth top with spatula. Spoon tomatoes evenly over cheese layer. Spoon hummus evenly over tomatoes. Sprinkle with cucumber.
  • Spoon one-third of the cheese mixture over cucumber; smooth top with spatula. Spoon olives evenly over cheese layer. Spoon remaining cheese mixture over olives; smooth top with spatula. Strike filled mold on counter to pack down. Cover and refrigerate at least 24 hours but no longer than 48 hours.
  • When ready to serve, turn mold upside down onto serving platter. Remove plastic wrap. Serve torte with pita wedges.

This is a delicious savoury pie guaranteed to impress at a special breakfast or brunch! Its a favourite of Karen Brimacombe, one of the authors of the Best of Bridge series! Its too large a large pie for just the 2 of us - so I made half the recipe this morning in a Corning baking dish; it required 60 minutes of baking time. Editted to add comments: Since it would be easier to serve from a springform pan, I recently purchased a half-sized one from Dollarama!

2 tablespoons butter or 2 tablespoons margarine
2 sweet red peppers, diced
2 small onions, chopped
2 garlic cloves, minced
2 (10 ounce) packages frozen spinach, thawed & squeezed dry (I use my ricer)
2 (14 ounce) packages frozen puff pastry, thawed
12 ounces black forest ham, sliced
1 lb mozzarella cheese, grated
8 eggs, beaten & seasoned with
salt & pepper
1 egg, beaten (for glaze)

Steps:

  • Melt butter in skillet over medium heat; cook peppers, onions & garlic for about 12 minutes or until all liquid evaporates.
  • Remove from heat & stir in spinach; set aside.
  • Roll each piece of pastry to 1/8 inch thickness; use 1 piece to line a 10 inch springform pan, leaving excess draped over sides.
  • Layer half the ham slices in the bottom, sprinkle half the cheese, spread half the veggies followed by the eggs.
  • Repeat these layers.
  • Cover with remaining pastry, trim off edges & pinch layers together; cut steam vents in the top & brush with egg glaze.
  • Place pan on a rimmed baking sheet in the centre of a preheated 400F oven for 15 minutes.
  • Reduce heat to 350F and bake for an additional 45 to 60 minutes or until top is golden & knife inserted in centre is hot when pulled out.
  • Let cool for 15 minutes; remove pan sides & cut into wedges.

8 ounces prepared hummus
1 1/4 cups plain yogurt, divided
1/2 teaspoon cumin
1/4 teaspoon garlic powder
1/4 teaspoon salt
1 teaspoon lemons or 1 teaspoon lime juice
1 cup seeded and chopped tomato
1 ripe avocado, seeded and chopped
1/2 cup peeled and chopped cucumber
salt & fresh ground pepper, to taste
4 -6 ounces crumbled feta cheese
2 tablespoons minced kalamata olives

Steps:

  • First, strain the yogurt by putting cheesecloth or a paper coffee filter in the bottom of a strainer and pour in all the yogurt but 1/4 cup (reserve for later); let it strain for a couple of hours to thicken it up, or overnight (in the fridge) to make thicker "yogurt cheese" (I prefer it just for a couple of hours; you could also substitute sour cream for the yogurt, if you like).
  • Combine the reserved 1/4 cup of un-strained yogurt with the prepared hummus, then spread mixture on the bottom of a 9 inch pie dish.
  • Combine remaining strained yogurt and cumin and spread over the hummus layer.
  • Toss together the garlic powder, salt, lemon/lime juice, chopped tomatoes, and avocado, then spread over the yogurt layer.
  • Add a layer of the cucumbers and sprinkle with a bit of salt and pepper.
  • Add a layer of feta, then finish it all off with olives.
  • Let chill for an hour before serving with pita chips (artichoke hearts are a good addition to this recipe, as well.).

1 medium seedless cucumber, chopped
1 teaspoon white wine vinegar
2 teaspoons minced fresh mint or 1 teaspoon dried mint
1 carton (10 ounces) hummus
1 medium red onion, chopped
1 cup chopped roasted sweet red peppers, drained
2 packages (4 ounces each) crumbled feta cheese
1/2 cup pitted Greek olives, sliced
2 plum tomatoes, chopped
Optional: Minced fresh parsley and additional minced fresh mint
PITA CHIPS:
20 pita pocket halves
1/4 cup olive oil
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Line a strainer with 4 layers of cheesecloth or 1 coffee filter and place over a bowl. Place yogurt in prepared strainer and cover with edges of cheesecloth. Refrigerate for 8 hours or overnight. In a small bowl, combine the strained yogurt, cucumber, vinegar and mint., Spread hummus in the bottom of a 9-in. deep dish pie plate. Layer with onion, peppers, feta cheese, olives, tomatoes and yogurt mixture. Top with parsley and additional mint if desired. Chill until serving., Cut each pita half into 3 wedges; separate each wedge into 2 pieces. Place in a single layer on ungreased baking sheets. 1 tablespoon milk or 1 tablespoon half-and-half

1 1/2 cups cold milk
2 (4 ounce) packages jell-o chocolate flavor instant pudding and pie filling mix

1 sheet prepared puff pastry
1 sheet prepared shortcrust pastry
300 g pumpkin
2 red peppers
300 g ricotta cheese
1/2 cup parmesan cheese
salt and pepper, to taste
nutmeg, to taste (optional)
1 clove garlic, crushed (optional)
2 cups spinach, cooked
1 egg, beaten

Steps:

  • Peel and slice pumpkin into even sized pieces, then cook until just tender.
  • Roast and peel the peppers, cut into large pieces.
  • Mix the ricotta with parmesan, salt, pepper and garlic.
  • Sprinkle a touch of nutmeg over the spinach (if using).
  • Grease a deep baking dish or pie plate and line it with a circle of the shortcrust, making sure there's an overhang to seal the top.
  • Layer the filling as follows: pumpkin, spinach, ricotta, red peppers.
  • Brush the pastry edge with egg, then use the puff pastry to make a lid.
  • Pinch the two pastries together to seal& brush the top with beaten egg.
  • Make a small hole in the top to let steam escape.

5 cups peeled and diced butternut squash (roughly a 1/2-pound squash)
Salt and freshly ground black pepper
6 tablespoons olive oil
1 yellow onion, diced
2 cups fresh leafy greens, stemmed and finely chopped
2 cloves garlic, minced, plus 1 clove peeled and smashed
2 cups cooked chickpeas or 1 (15-ounce) can chickpeas, drained and rinsed
1 cup walnuts, pulsed in a food processor until coarsely ground
5 anchovy fillets, minced
1 1/2 cups vegetable or chicken stock
1/2 cup bread crumbs
1 cup fresh flat-leaf parsley leaves
Zest of 1 lemon

Steps:

  • Preheat the oven to 400°F.
  • Toss the squash with salt and pepper and 3 tablespoons of the olive oil. Arrange it in a single layer on a baking sheet and roast until the squash is very soft, about 50 minutes. Stir occasionally. Let the squash cool and purée it in a food processor until smooth. Season with salt and set aside.
  • Heat a large sauté pan over medium-high heat and add 2 tablespoons olive oil. Add the onion and sauté until soft. Add the greens and cook for 2 minutes. Stir in the minced garlic, chickpeas, walnuts, and anchovies. Add the stock and bring to a boil. Decrease the heat and simmer, uncovered, for 15 minutes.
  • Transfer the chickpea mixture to a 10-inch round glass baking dish, and spread the squash purée evenly over the top. Sprinkle the bread crumbs over the squash in a thin layer, then drizzle with the 1 remaining tablespoon olive oil. Bake until the bread crumbs are lightly browned, 20 to 25 minutes.
  • To make the gremolata, combine the parsley, zest, and smashed garlic clove in a food processor, and grind to a coarse meal. Set aside in a small dish. Serve the pie in slices with the gremolata scattered on top.
