BUTTERY RED BLISS POTATOES
So simple yet so delicious. What caught my attention was the way the potatoes are artfully peeled for a pretty presentation on the dinner table. From the November 2004 issue of First magazine.

Steps:
- Use a vegetable peeler and remove the band of skin around the center of each potato, either in a straight line or squiggly line. Tip: I find it [much] easier to use a sharp paring knife to remove the peel.
- Place the potatoes in a large pot and add enough water to cover. Add some salt to the pot and bring the water to a boil.
- Reduce heat and simmer the potatoes for 20 minutes or until the potatoes are fork tender but not mushy.
- Drain.
- In serving bowl, toss the potatoes with the melted butter, marjoram, salt and pepper.

VEAL CUTLETS WITH TOMATO AND BASIL SAUCE
Steps:
- Sprinkle veal with salt and pepper; dust with flour to coat lightly. Heat 4 tablespoons olive oil in heavy large skillet over medium-high heat. Working in batches, add veal to skillet and sauté until brown, about 2 minutes per side. Transfer veal to plate. Add remaining 2 tablespoons olive oil to same skillet. Add garlic and sauté until fragrant, about 30 seconds. Add tomatoes with juices, basil, parsley, oregano and dried red pepper. Bring sauce to boil. Reduce heat to medium-low; simmer until flavors blend and sauce thickens slightly, scraping up browned bits, about 8 minutes. Season with salt and pepper. Arrange cutlets atop sauce. Top each with cheese. Cover; simmer until veal is tender and cheese melts, about 5 minutes.
Tips:
- To ensure the veal cutlets are cooked evenly, pound them to an even thickness before searing.
- For a crispy crust on the veal cutlets, make sure the skillet is hot before adding the meat.
- To prevent the veal cutlets from drying out, do not overcook them. Cook them for 3-4 minutes per side, or until they reach an internal temperature of 145 degrees Fahrenheit.
- To make the lentil puree smooth and creamy, use a food processor or blender.
- For a more flavorful lentil puree, add a bay leaf or two to the cooking liquid.
- To roast the potatoes evenly, toss them with olive oil and salt before roasting.
- For a crispy crust on the potatoes, roast them at a high temperature, 425 degrees Fahrenheit or higher.
Conclusion:
This layered portobello veal cutlets recipe is a delicious and impressive dish that is perfect for a special occasion. The veal cutlets are tender and flavorful, the lentil puree is rich and creamy, and the roasted potatoes are crispy and golden brown. This dish is sure to please everyone at your table.
