Tips:

  • Use a variety of squashes: Butternut, acorn, and pumpkin are all great options for muffins. You can also use a mix of different squashes.
  • Roast the squash before using it: Roasting the squash brings out its natural sweetness and flavor. You can roast the squash whole or in cubes.
  • Use a combination of flours: All-purpose flour, whole wheat flour, and oat flour all work well in squash muffins. You can also use a gluten-free flour blend.
  • Add spices and flavorings: Cinnamon, nutmeg, ginger, and pumpkin pie spice are all classic spices to use in squash muffins. You can also add vanilla extract, maple syrup, or chocolate chips.
  • Don't overmix the batter: Overmixing the batter will make the muffins tough. Mix the batter just until the ingredients are combined.
  • Bake the muffins until a toothpick inserted into the center comes out clean: This usually takes about 20-25 minutes.
  • Let the muffins cool before serving: This will help them to set and firm up.
