LEMON-APRICOT CHICKEN

Lemon-Apricot Chicken image

Do you love lemon or orange chicken at Chinese restaurants? Then this recipe is for you! It's from Betty Crocker's Bisquick Cookbook. It is divine. The ginger adds a subtle yet distinct tangy-ness to the sauce; I haven't tried it yet, but I wonder if orange marmalade would work as a substitute for the apricot preserves.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all of your ingredients and equipment ready to go. This will help you stay organized and make the cooking process more efficient.
  • Choose Ripe Apricots: When selecting apricots for this recipe, choose ripe, firm fruits. Avoid any that are bruised or have blemishes.
  • Season the Chicken Generously: Don't be afraid to season the chicken generously with salt and pepper. This will help to enhance the flavor of the dish.
  • Cook the Chicken Thoroughly: Make sure to cook the chicken thoroughly before serving. The internal temperature of the chicken should reach 165°F (74°C) as measured by a meat thermometer.
  • Thicken the Sauce: If you want a thicker sauce, you can add a cornstarch slurry (equal parts cornstarch and water) to the sauce and cook until thickened.
  • Garnish with Fresh Herbs: Before serving, garnish the dish with fresh herbs such as cilantro, parsley, or basil. This will add a pop of color and freshness.
