Steps:

  • In a large bowl, beat the butter, sugar, lemon juice and eggs. Combine the flour, baking powder and salt; stir into egg mixture alternately with milk, beating well after each addition. 3 tablespoons lemon juice
2 large eggs eggs
1 ½ cups all-purpose flour
1 teaspoon baking powder

½ cup chopped walnuts
1 cup fresh or frozen blueberries
2 tablespoons lemon juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch loaf pan.
  • In a mixing bowl, beat together butter, 1 cup sugar, juice and eggs. Combine flour, baking powder and salt; stir into egg mixture alternately with milk. Fold in lemon zest, nuts, and blueberries. Pour batter into prepared pan.

1 cup fresh or frozen blueberries
1-2/3 cups plus 1 tablespoon all-purpose flour, divided
1/2 cup butter, softened
1 cup sugar
2 large eggs
1-1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup milk
1 tablespoon grated lemon zest
GLAZE:
1/4 cup sugar
1/4 cup lemon juice

Steps:

  • Toss berries with 1 tablespoon flour; set aside. In a large bowl, cream butter and sugar until fluffy. Add eggs, one at a time, beating after each addition. I love Trader Joe's Blueberry Lemon Bread so I was looking for a recipe that was similar. This what I came up with. Actually, I can't take all of the credit. I modified recipe #19254 for Glazed Lemon Cake slightly and added blueberries, then baked it in loaf pans. My whole family loves this bread. In fact, I think it's better than Trader Joe's Blueberry Lemon Bread....geez....I know, I am so modest ;-)

2 cups granulated sugar
3 eggs
3 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt

8 ounces frozen blueberries
8 ounces powdered sugar (or 1/2 box)
1/4 cup butter, melted

Steps:

  • Preheat oven to 325 degrees.
  • Important: grease and flour two loaf pans.
  • Cream butter and sugar.
  • Add eggs and beat until smooth.
  • Add buttermilk.
  • Mix dry ingredients together and add to buttermilk mixture.
  • Blend well.
  • Mix in lemon juice and zest.
  • Gently fold in blueberries and only mix until incorporated.
  • Pour batter into loaf pans.
  • Bake loaves on the middle rack of the oven for 60 to 65 minutes.
  • Cool bread 10 minutes, remove from pan and place on a large cookie sheet, top side up.
  • For icing: Combind icing ingredients in a bowl.
  • Beat icing with an electric mixer until smooth.

  • The icing will harden when the bread cools to room temperature.
  • I thought I should mention, if you make this bread without the addition of the blueberries, the baking time is closer to 50 minutes and I recommend increasing the amount of buttermilk from 2/3 cup to 1 cup.

1 (.25 ounce) package rapid rise yeast
½ teaspoon ground cardamom
¾ cup milk
¼ cup white sugar

1 teaspoon finely grated lemon zest
½ teaspoon lemon extract
2 teaspoons milk
2 tablespoons sliced almonds

  • Combine flour, yeast, and cardamom in a large mixing bowl.

The one hazard was that the bears were doing the same thing so it was a race to see who got the most berries during the season. Bears don't digest blueberries very well so they come out whole alot of the time.

Steps:

  • Preheat oven to 350 degrees. Grease and flour a 8 inch loaf pan.
  • Rinse blueberries from mix with cold water and drain.
  • For Bread: Combine muffin mix and poppy seeds in medium bowl. Add eggs and water, stir until moistened. Fold in blueberries and lemon peel.
  • Pour into prepared pan.
  • Bake at 350 degrees for 1 hour or until toothpick comes out clean.
  • Cool in pan 10 minutes before removing from pan to cool completely.
  • For Glaze: Combine powdered Sugar and lemon juice, stir until smooth. Drizzle over loaf.

3 eggs
1 c canola oil
3 tsp vanilla extract
21/4 c white sugar
2 c shredded zucchini
3 c all-purpose flour
1 tsp salt
1 tsp baking powder
1/4 tsp baking soda
1 Tbsp cinnamon
1 pt fresh blueberries
zest of half a lemon

Steps:

  • 1. Preheat oven to 350° and lightly grease 2 loaf pans. In a large bowl beat eggs, oil, vanilla, and sugar. (I did this by hand),
  • 2. Fold in the zucchini.
  • 3. Beat in the flour, salt, baking powder, baking soda, and cinnamon (did one cup at a time and then added the salt, baking powder, baking soda, and cinnamon to the last cup of flour).
  • 4. Gently fold in the blueberries and zest.
  • 5. Transfer the batter to your loaf pans.
  • 6. Bake for about an hour and ten minutes.
  • 7. The time may vary depending on your oven. Just check it and if a knife inserted in the center comes out clean it's done.
  • 8. Cool in the pan for 25 minutes on a rack.
  • 9. Then remove from pans and finish cooling on the rack.

I had a bunch of fresh blueberries, lemons, buttermilk & white chocolate chips to use up after the Scandinavian leg of the Zaar World Tour #6. This morning I was making a Greek breakfast wrap for Zingo that would use up Kalamata olives & feta cheese, but I wasn't sure my family was going to like it, so I created this moist & delicious quick bread to "sweeten the deal". ;) Incidentally, they ended up enjoying both the Greek wraps & the bread! :D

Number Of Ingredients 11

1 lemon, juice and zest of
1 cup sugar
1/3 cup butter, melted
2 eggs
1 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup buttermilk
1/2 cup blueberries (fresh or frozen)
1/2 cup white chocolate chips
1/4-1/2 cup powdered sugar

Steps:

  • Preheat oven to 350°F and grease one 9x5 loaf pan.
  • Zest the lemon, then squeeze the juice from it. (You should have approximately 4 Tablespoons of juice, which will be divided.) Set zest and juice aside.
  • In large mixer bowl, beat together the sugar, melted butter, 3 Tablespoons of the lemon juice, lemon zest and the eggs.
  • In smaller bowl, sift together the flour, baking powder and salt. Add half to the egg mixture and beat to combine.
  • Add the buttermilk, combine and then add the rest of the flour mixture. Beat until smooth.
  • Fold in white chocolate & blueberries.
  • Pour batter into prepared pan and bake for 60 minutes or until a toothpick inserted in the center comes out clean.
  • Cool for 20 minutes in the pan, then gently turn out onto a platter or baking rack.
  • While warm, combine the remaining lemon juice with enough powdered sugar to create a semi-thin glaze.
  • Pour evenly over the bread.
  • Serve warm or cool.
