Provided by Suzy Karadsheh

Categories     Entree

Time 22m

Number Of Ingredients 12

1.5 lb Cod fillet pieces, (4-6 pieces)
1/4 cup chopped fresh parsley leaves
5 tbsp fresh lemon juice
5 tbsp extra virgin olive oil
2 tbsp melted butter
5 garlic cloves, (minced)
1/3 cup all-purpose flour
1 tsp ground coriander
3/4 tsp sweet Spanish paprika
3/4 tsp ground cumin
3/4 tsp salt
1/2 tsp black pepper

Steps:

  • Preheat oven to 400 degrees F.
  • Mix together the lemon juice, olive oil, and melted butter in a shallow bowl (do not add the garlic yet). Set aside.
  • In another shallow bowl, mix the all-purpose flour, spices, salt and pepper. Set next to the lemon sauce.
  • Pat the fish dry. Dip the fish in the lemon sauce then dip it in the flour mixture. Shake off excess flour. Reserve the lemon sauce for later.
  • Heat 2 tbsp olive oil in a cast iron skillet (or an oven-safe pan) over medium-high heat (watch the oil to be sure it is shimmering but not smoking). Add the fish and sear on each side to give it some color, but do not fully cook (about 2 minutes on each side). Remove the skillet from heat.
  • To the remaining lemon sauce, add the minced garlic and mix. Drizzle all over the fish fillets.
  • Bake in the heated oven until the fish flakes easily with a fork (10 minutes should do it, but begin checking earlier). Remove from the heat and sprinkle chopped parsley. Serve immediately.

COD WITH LEMON, GARLIC, AND CHIVES

Cod with Lemon, Garlic, and Chives image

This is a super simple recipe that can be used with any fish. I just happen to like cod a lot. You throw the ingredients in a foil pouch, then steam in the oven. A true no-brainer meal.

Time 30m

Yield 4

Number Of Ingredients 6

4 (6 ounce) cod fillets
4 teaspoons olive oil
salt and ground black pepper to taste
1 bunch fresh chives, coarsely chopped
2 lemons, sliced
2 cloves garlic, sliced

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Cut 4 large squares of heavy-duty aluminum foil. Brush each fillet with olive oil and sprinkle with salt and black pepper. Place each fillet in the center of an aluminum foil square. Lay lemon slices down the length of each fillet and sprinkle garlic slices and chives over the top. Fold foil over the fish and turn the edges over 2 or 3 times; flatten to seal the packets.
  • Bake in the preheated oven until the fish is opaque and flakes easily with a fork, 15 to 20 minutes.

Tips:

  • For a crispier crust, pat the cod fillets dry before baking.
  • Use a light hand when seasoning the cod with salt and pepper, as the lemon and garlic will also add flavor.
  • If you don't have fresh lemon slices, you can use bottled lemon juice. Just be sure to add a little more zest to compensate for the lack of flavor from the fresh lemon.
  • You can also add other herbs and spices to the cod, such as thyme, rosemary, or paprika.
  • Be careful not to overcook the cod, as it will become tough and dry. The fish is done when it flakes easily with a fork.

Conclusion:

This Lemon Garlic Baked Cod is a simple and delicious dish that is perfect for a weeknight meal. It is also a great way to get your daily dose of omega-3 fatty acids. Serve the cod with your favorite sides, such as roasted vegetables, rice, or mashed potatoes.
