Tips:

  • Choose the right lemons: Meyer lemons are the best choice for Lemon Gems because they are sweeter and have a thinner rind than other varieties. If you can't find Meyer lemons, you can use regular lemons, but you may need to adjust the amount of sugar in the recipe.
  • Zest the lemons finely: The lemon zest is what gives Lemon Gems their bright citrus flavor. Be sure to zest the lemons finely so that it is evenly distributed throughout the cookies.
  • Cream the butter and sugar together until light and fluffy: This step is important for creating a smooth and creamy cookie dough. Cream the butter and sugar together for at least 2 minutes, or until the mixture is pale yellow and fluffy.
  • Add the eggs one at a time: This will help to prevent the cookies from curdling. Beat each egg into the dough until it is completely incorporated before adding the next one.
  • Don't overmix the dough: Overmixing the dough will make the cookies tough. Mix the dough just until it is combined, then stop.
  • Chill the dough for at least 30 minutes before baking: This will help the cookies to hold their shape and prevent them from spreading too much in the oven.
  • Bake the cookies until they are just set: The cookies should be slightly golden brown around the edges and still a little soft in the center. If you overbake them, they will be dry and crumbly.

Conclusion:

Lemon Gems are a classic cookie recipe that is perfect for any occasion. They are easy to make and always a hit with friends and family. With their bright citrus flavor and tender crumb, Lemon Gems are sure to become a favorite cookie recipe in your home.
