4 to 6 teaspoons lemon juice

2 cups all-purpose flour
1 1/4 teaspoons coarse salt
1 cup (2 sticks) unsalted butter, softened, plus more for pan
5 teaspoons finely grated lemon zest
1 tablespoon fresh lemon juice
3/4 cup confectioners' sugar

Steps:

  • Preheat oven to 300 degrees, with rack in upper third. Sift flour and salt into a bowl; set aside. Put butter into the bowl of an electric mixer fitted with the paddle attachment. Mix on medium-high speed until fluffy, 3 to 5 minutes, scraping down sides of bowl. Gradually add sugar; beat until pale and fluffy, about 2 minutes. Mix in lemon zest and juice.
  • Reduce speed to low. Add flour mixture all at once; mix until just combined.
  • Halve dough, and shape into disks. Wrap each in plastic, and refrigerate 1 hour.

1 cup unsalted butter, softened
1/2 cup light brown sugar, packed
3 tablespoons sugar
1 cup finely minced cashews
2 cups unbleached all-purpose flour (plus extra for handling the dough)
1/2 teaspoon salt
1/2 teaspoon baking powder

Steps:

  • Preheat oven to 350.
  • In a large bowl, combine butter, brown sugar, and sugar; beat at high speed for appx 3 minutes with electric mixer.
  • Stir in cashews.
  • Sift flour, salt, & baking powder directly into the bowl.

¾ cup unsalted butter, at room temperature
¼ cup confectioners' sugar
1 ½ tablespoons white sugar
¾ teaspoon lemon zest
¼ teaspoon salt
1 ½ cups all-purpose flour
¾ teaspoon lemon juice
½ cup milk
1 ½ tablespoons dried lavender flowers
1 cup confectioners' sugar
1 tablespoon Meyer lemon juice, or as needed

  • Preheat oven to 400 degrees F (200 degrees C).
  • Beat butter, 1/4 cup confectioners' sugar, white sugar, lemon zest, and salt together in a bowl with an electric mixer until fluffy.
