1 pound medium shrimp, peeled and deveined, with shells reserved
4 cups water
3 stalks fresh lemon grass, green tops trimmed off and reserved, white bulb pounded flat and cut into 1-inch lengths
1 15-ounce can straw mushrooms, drained
1 small tomato, cut into thin wedges
1 large scallion, thinly sliced
1 1/2 cups mung bean sprouts
1 1/2 teaspoons grated lime zest
3 tablespoons plus 1 teaspoon fresh lime juice
1/4 teaspoon freshly ground pepper
1/4 cup bottled fish sauce (nuoc mam)
1/4 teaspoon dried chili flakes, plus more to taste
1/2 teaspoon chili oil
4 cups cooked white rice

Steps:

  • In a saucepan, cover the shrimp shells with 4 cups water. Add the lemon grass tops and bring to a boil over high heat. Remove, strain the broth and return it to the saucepan.
  • Add the mushrooms, lemon grass pieces and tomato. Bring to a boil, reduce the heat to medium and simmer for 4 minutes. Add the shrimp and simmer until they are opaque, about 2 minutes. Pour into a tureen. Stir in the scallion, bean sprouts, lime zest and juice, pepper, fish sauce, chili flakes and chili oil. Serve with the rice.

Number Of Ingredients 10

4 cups chicken broth
12 ounces boneless skinless chicken breasts
2 pieces fresh gingerroot, each, about 1/4 inch in thickness
1 teaspoon brown sugar
4 stalks lemongrass
2 whole limes
1 small shallot, minced
2 tablespoons fish sauce
1 1/2 tablespoons chili-garlic sauce
2 tablespoons chopped fresh cilantro

Steps:

  • To a medium size cooking pot, add chicken broth, ginger and brown sugar.
  • To prepare lemon grass; remove all but the bottom 5 inches of the stalks.
  • Place 8 to 10 outside lemon grass sheaths into soup pot, (the sheaths are used like a bay leaf).
  • Mince the bottom 2 inches of the tender inside leaves and set aside,(require about 3 tablespoons).
  • With a potato peeler, peel 6 strips of rind from one lime and add to the broth; (make sure to only use the outer green rind).
  • Bring broth to a boil, then reduce heat to a simmer; cover and simmer for 15 minutes.
  • While chicken is cooking, grate rind (NO PITH) from the remaining lime and set aside.
  • Juice both limes to measure 3 tablespoons of juice and set aside.
  • When chicken is cooked through, remove from pot to a plate and shred chicken using 2 forks.
  • At this time, strain broth and return to cooking pot. Discard any solids.
  • Add shredded chicken into the cooking pot.
  • Add minced lemon grass, grated lime rind, lime juice, shallots, fish sauce and garlic chili pepper sauce.
  • Bring soup back to a simmer and sprinkle with cilantro.
  • Serve immediately.
  • In small bowls,mix together with additional chopped cilantro and garlic-chili pepper sauce for additional garnish if desired.

6 cups good-quality chicken stock (Serves 2 as the main entree, or 4-6 as an appetizer)
1-2 chicken breasts, sliced, OR 1-2 cups roasted chicken or turkey
1 lemongrass stalk, OR 3 Tbsp. frozen prepared lemongrass
4 kaffir limes leaves (fresh or frozen)
1 cup shiitake mushrooms, sliced
1 thumb-size piece galangal or ginger, grated
1-3 fresh red chilies, minced (to taste), OR substitute 1/2 to 3/4 tsp. dried crushed chili
1/2 to 1 can good-quality coconut milk
2 Tbsp. lime juice
2+ Tbsp. fish sauce
1 tsp. brown sugar (optional, according to taste)
handful fresh coriander leaves
handful fresh basil leaves
3 spring (green) onions, sliced
optional: other vegetables, like sliced bell pepper or cherry tomatoes
optional: *wheat or rice noodles, if serving as the main course (see tip below)

Steps:

  • Preparation: Slice and mince the lower portion of the lemongrass stalk. Retain the upper stalk for the soup pot. For more detailed instructions on how to do this, see: All About Lemongrass Guide Place chicken broth in a large soup pot over medium-high heat. If you have leftover chicken or turkey bones, add those too. Bring to a boil. Add fresh chicken (or leftover chicken or turkey) and mushrooms. Also add the prepared lemongrass (including upper stalk pieces), plus kaffir lime leaves and fresh chili. Boil 5-8 minutes, or until chicken is cooked. Turn heat down to medium. Add the galangal or ginger, 1/2 can coconut milk, the fish sauce, and extra vegetables (if using). Stir well. Simmer gently 1-2 minutes. Turn heat down to minimum. Add lime juice and stir. Do a taste test. Look for a balance between spicy, sour, salty, and sweet flavors. Start with salty, adding more fish sauce if not salty or flavorful enough (1 Tbsp. at a time). If too sour, add the sugar plus a little more if you need it. If too spicy, or if you'd like it creamier, add more coconut milk. If not spicy enough, add more chili. Ladle soup into serving bowls. Sprinkle a little fresh coriander, basil, and spring onion over each bowl. For an extra kick of flavor, add a dollop of either store-bought or my own homemade Nam Prik Pao Chili Sauce Recipe. ENJOY!

2 teaspoons unrefined peanut oil or sesame oil
1 large onion, in thick slices
1 3-inch piece ginger, peeled and thinly sliced
1/2 cup thinly sliced lemon grass
1 2-inch piece cinnamon stick
2 star anise
4 cloves
1/2 teaspoon coriander seeds, crushed
1/2 teaspoon fennel seeds, crushed
4 small dry red chiles
1/8 teaspoon turmeric
2 teaspoons sugar
1 tablespoon soy sauce
2 teaspoons Asian fish sauce
8 cups fish broth or chicken broth
Salt and pepper
8 ounces thin rice noodles (vermicelli)
2 pounds mussels, scrubbed
1 pound squid, sliced 1/2-inch thick
1/2 cup roughly chopped cilantro, for garnish
1/4 cup chopped scallions, for garnish
Leaves from 1 small bunch Thai basil, for garnish
6 fresh green or red Thai bird chiles, slivered, for garnish
Lime wedges, for garnish

Steps:

  • Place a heavy-bottomed soup pot over medium-high heat. Add the peanut oil, and swirl to coat. When oil is hot, add the onion and cook for 5 minutes, stirring, until softened and lightly browned. Add all the aromatics (ginger, lemon grass, cinnamon, star anise, cloves, coriander, fennel, dry chiles and turmeric) and stir to distribute. Add the sugar and let everything fry lightly, until sugar begins to caramelize, about 2 minutes. Add the soy sauce, fish sauce and broth. Bring to a boil, then reduce heat to a gentle simmer. Cook for 30 minutes. Strain, discarding solids. Season to taste with the salt and a generous amount of pepper. (May be prepared several hours ahead.)
  • Soak the rice noodles: Put the rice vermicelli in a large bowl. Cover with boiling water. Stir noodles as they soften. Soak for about 20 minutes until tender. Cool in a colander under running water and drain. Reserve at room temperature.
  • To serve, bring soup to a brisk simmer. Add the mussels and put on the lid. Cook 2 minutes, until mussels have opened. Add the squid, stir to combine and cook 30 seconds more. Turn off heat.
  • Divide rice noodles among 4 large soup bowls. Ladle soup into bowls. Sprinkle with the cilantro, scallions and Thai basil. Pass the fresh chiles and lime wedges separately.

6 whole chicken thighs
2 stalks lemongrass
2 kafir fresh lime leaves
2 garlic cloves, halved
1 red chile, roughly chopped
4 cm piece gingerroot, thickly sliced
1 lime, juice of
4 tablespoons light soy sauce
1 bunch green onion, thinly sliced
1 tablespoon fresh coriander leaves

Steps:

  • Remove the skin from the chicken thighs and discard; place the thighs in a large pan. Bruise the lemon grass with a rolling pin and crumple the lime leaves in the palm of your hand. Place in the pan with the garlic, chilli, including the seeds, and ginger and 1.5 litres of water. Bring to the boil and simmer for 30 minutes until the chicken is cooked right through.
  • Strain the stock into a clean pan then, using 2 forks, shred the meat off the bones. Return the chicken to the pan with the fresh lime juice, soy sauce and sliced salad onions. Heat through gently and when steaming hot, ladle into bowls. Loosely scatter over the coriander leaves and serve.
  • For pretty presentation and a little extra flavour, try drizzling a splash of chilli or sesame oil over the surface of each serving.
