1/2 cup milk
Finely grated zest and juice of 1 lemon
1 1/2 cups raw almonds, finely chopped
1 cup natural cane sugar
1 cup fine yellow cornmeal
1 1/2 teaspoons baking powder

Tips:

  • For a moist and tender cake, use buttermilk instead of regular milk. Buttermilk reacts with the baking soda to create a light and fluffy crumb.
  • For a tangy flavor, use freshly squeezed lemon or lime juice and zest. The citrus flavor will brighten up the cake and balance out the sweetness.
  • Be sure to grease and flour the baking pan before adding the batter. This will help the cake to release easily from the pan after baking.
  • Bake the cake until a toothpick inserted into the center comes out clean. Overbaking will dry out the cake.
  • Allow the cake to cool completely before frosting. This will help the frosting to set properly.

Conclusion:

Lemon or lime cornmeal cake is a delicious and refreshing dessert that is perfect for any occasion. It is easy to make and can be enjoyed by people of all ages. With its moist and tender crumb, tangy citrus flavor, and sweet frosting, this cake is sure to be a hit. So next time you are looking for a special dessert, give lemon or lime cornmeal cake a try!
