This is a wonderful marinade for dark meat such as chicken thighs or turkey legs. It can be used for white meat also, but it's best to leave the skin on white meat until it is cooked.

Time 6m

Yield 4 ounces

Number Of Ingredients 3

4 tablespoons freshly squeezed lemon juice
4 tablespoons fresh oregano, chopped or 1 1/2 teaspoons dried oregano
4 tablespoons olive oil

Steps:

  • Mix ingredients in a small bowl.
  • Marinate chicken or turkey for several hours prior to broiling, grilling, or barbecuing.

Tips:

  • Choose the right cut of meat: Flank steak, skirt steak, and chicken breasts are all great options for this marinade. They are relatively thin and cook quickly, so they will absorb the flavor of the marinade well.
  • Use fresh herbs: Fresh oregano and lemon zest add a bright, citrusy flavor to the marinade. If you don't have fresh herbs on hand, you can use dried herbs, but they will not be as flavorful.
  • Let the meat marinate for at least 30 minutes: The longer the meat marinates, the more flavor it will absorb. If you are short on time, you can marinate the meat for as little as 15 minutes, but the flavor will not be as pronounced.
  • Cook the meat over high heat: This will help to sear the meat and lock in the flavor of the marinade. If you are cooking the meat on a grill, make sure the grill is hot before you add the meat.
  • Serve the meat with a simple sauce: A simple sauce, such as a lemon-herb sauce or a chimichurri sauce, will complement the flavors of the meat without overpowering them.

Conclusion:

This lemon oregano marinade is a versatile and flavorful marinade that can be used on a variety of meats. It is easy to make and can be used with fresh or dried herbs. The marinade is also gluten-free and dairy-free, making it a great option for people with food allergies or sensitivities.

Whether you are grilling, roasting, or pan-frying your meat, this marinade will help you create a delicious and flavorful meal. So next time you are looking for a marinade, give this lemon oregano marinade a try.
