LEMON ORZO SALAD WITH ASPARAGUS AND TOMATOES

Lemon Orzo Salad With Asparagus and Tomatoes image

This recipe is really light and refreshing. I had this at a BBQ and loved it, so I made it tonight. Mine tasted a lot more lemony. It was great, but I'll probably use a little less lemon zest next time. I served the cheese on the side to allow my guests to choose if they wanted to add it or not. It comes from this website: http://www.abigmouthful.com/lemon-orzo-salad-with-asparagus-and-tomatoes/

Time 25m

Yield 8 serving(s)

Number Of Ingredients 10

12 ounces orzo pasta
1 bunch fresh asparagus, cut into 1-inch pieces
1 pint grape tomatoes or 1 pint cherry tomatoes, halved
1 lemon, zested and juiced
4 tablespoons extra virgin olive oil
1 garlic clove, minced
2 tablespoons fresh parsley, minced
kosher salt
fresh ground pepper
parmigiano-reggiano cheese, grated (optional)

Steps:

  • Bring 2 large pots of water to boil. Add a big pinch of salt in each.
  • To one pot, add asparagus and blanch, about 2 to 3 minutes, depending on the thickness of your asparagus. Place blanched asparagus in a bowl of ice water to stop the cooking and keep them green.
  • To the second pot, add the orzo. Cook per package instructions. When tender, drain and place in a large bowl. Add blanched asparagus and tomato halves.
  • Mix olive oil, lemon zest, lemon juice, garlic, salt and pepper in a small bowl. Stir into orzo and vegetables. Stir in parsley and grated Parmigiano Reggiano (omit the cheese to make this vegan.)
  • This can be served warm, room temperature or cold.

Time 35m

Yield 12 servings

Number Of Ingredients 7

1 pound orzo
2 cloves garlic, chopped
2 lemons, juiced
1 cup extra-virgin olive oil
2 cups cherry tomatoes, halved
1/4 cup roughly chopped Italian parsley leaves
6 lemons

Steps:

  • For the salad: In salted, boiling water, cook the orzo until al dente. Strain and cool. Whisk together the garlic, lemon juice, and extra-virgin olive oil. In a large bowl, toss the orzo together with the tomatoes, parsley, and olive oil mixture. Season, to taste, with salt and fresh ground pepper.
  • For the lemon cups: Cut a small piece off both tips of the lemon. Make sure the cut does not expose any flesh, only pith. Cut the lemon evenly in half across the diameter. Use a spoon to remove the flesh of the lemon and scrape the skin clean, being careful not to cut or damage the skin.
  • To assemble: Fill each lemon cup with the orzo salad and arrange on a platter for service.

LEMON ORZO SALAD WITH ASPARAGUS, SPINACH, AND TOFU FETA RECIPE - (4/5)

Lemon Orzo Salad with Asparagus, Spinach, and Tofu Feta Recipe - (4/5) image

Provided by GuidingVegan

Number Of Ingredients 9

1 cup orzo
Salt-about 1/2 tsp. for boiling water
2 cloves garlic, finely chopped
1 teaspoon olive oil
8 asparagus spears, cut into 1 inch pieces
1 cup packed fresh spinach
Juice of 1 large lemon
1/3 cup tofu feta cheese
Salt and pepper, to taste

Steps:

  • 1. In a medium sauce pan, bring 4 cups of water to boil. Add the salt. Stir in orzo. Cook until tender, about 10 minutes. Drain orzo and set aside. 2. In a small sauce pan, saute garlic in olive oil. Add in asparagus pieces. Saute for 3-4 minutes. Stir in spinach. Cook until asparagus is tender and the spinach shrinks down. 3. Put the orzo in a medium bowl and add in the vegetables. Squeeze fresh lemon juice over the orzo and vegetables. Stir. Season with salt and pepper. Taste-add more lemon juice if you wish. The lemon I used was huge, so I only needed to use one lemon. If you need more juice, go ahead. 4. Sprinkle tofu feta cheese over the top of the salad. Serve warm. (I also liked the salad cold.)

ASPARAGUS, SUNDRIED TOMATO, AND ORZO SALAD

Asparagus, Sundried Tomato, and Orzo Salad image

A yummy and simple way to use fresh asparagus. I was inspired to write this recipe after watching my almost-4-year-old picky eater gobble up a mixture of orzo and sundried tomatos at Trader Joe's. The asparagus can easily be changed to another vegetable; I have successfully used brussels sprouts with a very pleasing result.

LEMONY ORZO WITH ASPARAGUS AND GARLIC BREAD CRUMBS

Lemony Orzo With Asparagus and Garlic Bread Crumbs image

Every spoonful of this pasta has a happy jumble of lemony orzo, grassy asparagus, garlicky bread crumbs, fresh herbs and salty Parmesan. The pasta and thinly sliced asparagus cook together in the same pot, then rest in a lemony dressing while the garlic bread crumbs are toasted, so the pasta has time to absorb as much flavor as possible.

Time 20m

Yield 4 servings

Number Of Ingredients 9

Kosher salt and black pepper
1 cup orzo
1 pound asparagus, trimmed and thinly sliced on a diagonal (about 1/4-inch thick)
5 tablespoons extra-virgin olive oil
1 teaspoon lemon zest plus 3 tablespoons lemon juice, plus more as needed (from about 1 large lemon)
1/2 cup panko or homemade bread crumbs
1 small garlic clove, finely grated
1/4 cup finely grated Parmesan, plus more for serving
1/2 cup fresh dill, mint or parsley leaves (or any combination), torn if large

Steps:

  • Bring a medium pot of salted water to a boil. Add the orzo and cook until al dente according to package directions. Two minutes before the orzo is done, add the asparagus. Drain the orzo and asparagus. Wipe out and reserve the pot.
  • While the orzo and asparagus cook, make the dressing: In a large bowl, stir together 3 tablespoons oil and the lemon zest and juice; season to taste with salt and pepper. Add the drained orzo and asparagus and toss to coat. Set aside while you toast the bread crumbs.
  • In the reserved pot, heat the remaining 2 tablespoons oil over medium. Add the panko and cook, stirring, until golden brown, 3 to 5 minutes. Remove from heat, then stir in the garlic and season with salt and pepper.
  • Stir the Parmesan and herbs into the orzo, taste, then season with salt, pepper and additional lemon juice, if desired. Top with the toasted bread crumbs and more Parmesan if you like. Serve warm or at room temperature.

Tips:

  • Choose the right orzo: Look for a high-quality orzo pasta made with durum wheat semolina. This will ensure that the pasta holds its shape and doesn't become mushy when cooked.
  • Cook the orzo al dente: This means cooking the pasta until it is just tender but still has a slight bite to it. Overcooked orzo will be mushy and unpleasant to eat.
  • Use fresh, seasonal ingredients: The key to a great lemon orzo salad is using fresh, flavorful ingredients. Look for ripe tomatoes, asparagus, and herbs.
  • Don't overcrowd the pan: When cooking the asparagus, don't overcrowd the pan. This will prevent the asparagus from cooking evenly and becoming limp.
  • Let the salad cool before serving: This will allow the flavors to meld and the salad to firm up.

Conclusion:

Lemon orzo salad with asparagus and tomatoes is a refreshing and flavorful side dish that is perfect for any occasion. With its bright citrus flavor, tender asparagus, and juicy tomatoes, this salad is sure to be a hit. So next time you're looking for a light and easy summer salad, give this lemon orzo salad a try.
