LEMON ICEBOX PIE WITH FROZEN LEMONADE

My husband's grandmother used to make a lemon icebox pie similar to this for all of our summer get-togethers. He played around, and came up with a much simpler and quicker version with frozen lemonade.

1 (8 ounce) tub frozen whipped topping (such as Cool Whip®), thawed
1 (9 inch) prepared graham cracker crust

Tips:

  • To make the perfect lemon pie crust, use a combination of all-purpose flour, sugar, and salt. Mix them together until they resemble coarse crumbs, then add cold butter and shortening. Work the mixture with your fingers until it forms a dough. Press the dough into a 9-inch pie plate and trim the edges.
  • For the lemon pie filling, use frozen lemonade concentrate, sugar, cornstarch, salt, and eggs. Mix them together in a saucepan and cook over medium heat, stirring constantly, until the mixture thickens and boils. Remove the saucepan from the heat and stir in butter. Pour the filling into the prepared pie crust and let it cool completely.
  • To make the whipped cream topping, whip heavy cream, sugar, and vanilla extract together until stiff peaks form. Spread the whipped cream over the cooled lemon pie filling and garnish with lemon zest.
  • For a richer lemon pie, use a combination of Meyer lemons and regular lemons for the filling.
  • If you don't have frozen lemonade concentrate, you can use fresh lemon juice instead. Just add an extra cup of sugar to the filling.
  • Serve the lemon pie chilled for the best flavor.

Conclusion:

With its creamy lemon filling, flaky crust, and fluffy whipped cream topping, this lemon pie is sure to be a hit with everyone. It's the perfect dessert for any occasion, and it's easy to make with just a few simple ingredients. So next time you're looking for a delicious and refreshing dessert, give this frozen lemonade lemon pie a try. You won't be disappointed!
