MOIST AND FLUFFY LEMON POPPY SEED MUFFINS

Moist and Fluffy Lemon Poppy Seed Muffins image

Taken from 'The Canadian Baker' Blog. Absolutely the best texture I've ever had. Moist, fluffy, and light. Adaptable for blueberry lemon muffins, raspberry orange etc. I will add more lemon juice next time as I found it not zesty enough, and will cut back on the poppy seeds slightly. A simple lemon glaze makes this the perfect sweet treat for a cold day or an after lunch dessert.

Tips:

  • Use fresh lemons. Fresh lemon zest and juice give these muffins their bright, citrusy flavor. If you don't have fresh lemons, you can substitute bottled lemon juice, but the flavor will be less intense.
  • Don't overmix the batter. Overmixing the batter will make the muffins tough. Mix just until the ingredients are combined.
  • Fill the muffin cups almost to the top. This will help the muffins rise evenly.
  • Bake the muffins until a toothpick inserted into the center comes out clean. Overbaking will make the muffins dry.
  • Make the lemon glaze while the muffins are baking. This will give the glaze time to cool and thicken slightly.
  • Dip the muffins in the lemon glaze while they are still warm. This will help the glaze adhere to the muffins.

Conclusion:

Lemon poppyseed muffins are a classic bakery treat that are easy to make at home. With their bright citrus flavor and tender crumb, these muffins are perfect for any occasion. Whether you're serving them for breakfast, brunch, or dessert, these muffins are sure to be a hit.
