1 3/4 cup all-purpose flour, more for pan
Zest of 2 lemons
1 cup sugar
1/2 cup buttermilk
3 tablespoons plus 4 teaspoons lemon juice
3 large eggs
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon fine sea salt
2/3 cup extra-virgin olive oil
1 tablespoon poppy seeds
1/2 cup confectioners' sugar

Steps:

  • Heat oven to 350 degrees. Butter and flour an 8-inch loaf pan.

3/4 cup frozen or fresh blueberries- if you use frozen, do not thaw or your batter will turn purple
12 tablespoons unsalted butter, softened
1/4 cup granulated sugar
3 extra large eggs, at room temperature
1 1/4 cups cake flour*
2 teaspoons baking powder
1/2 cup yellow cornmeal
1/4 teaspoon salt
Zest of 2 lemons
2 teaspoons freshly squeezed lemon juice
Glaze
zest (optional but adds a wonderfully tart texture) and juice of 4 lemons, approximately 1/4 cup
1 cup confectioners sugar

  • 1. Preheat oven to 350 degrees F. Generously grease a 8 1/2 inch loaf pan with 1 tablespoon butter. 2. Steps:

  • Preheat the oven to 350 degrees. Grease and flour a large tube pan with a removable bottom. In a medium bowl, whisk together the flour, poppy seeds, baking powder and salt. Set aside.
