1 cup all-purpose flour

1 cup confectioners' sugar
1/2 teaspoon grated lemon zest
2 tablespoons lemon juice

Steps:

  • In a small bowl, cream butter and confectioners' sugar until light and fluffy. Beat in lemon zest. In another bowl, whisk flour and cornstarch; gradually beat into creamed mixture. Refrigerate, covered, 1 hour or until easy to handle., Shape into a 7-in.-long roll (about 1-3/4-in. diameter); roll in colored sugar. 1 teaspoon baking powder
1/4 teaspoon salt
1 cup butter, at room temperature
2/3 cup sugar
2 large egg yolks
1 large lemon, zest of
1 tablespoon fresh lemon juice
1 teaspoon pure vanilla extract
1/2 cup raspberry jam
1/2 cup powdered sugar

Steps:

  • Preheat oven to 350°F.
  • Whisk together flour, baking powder, and salt.
  • Beat butter and sugar until creamy.
  • Add yolks, zest, juice, and vanilla. Beat well.
  • Add the flour mixture and beat to combine well.

1/4 cup cornstarch
1/2 teaspoon salt

1/4 cup confectioners' sugar, plus more for dusting
2 tablespoons granulated sugar
Finely grated zest of 2 lemons
2 tablespoons fresh lemon juice
1/2 cup seedless raspberry jam

Steps:

  • Line 2 baking sheets with nonstick baking mats or parchment paper; set aside. Whisk together both flours, cornstarch, and salt in a bowl.
  • Put butter, sugars, lemon zest, and 1 tablespoon lemon juice into the bowl of an electric mixer fitted with the paddle attachment. Beat on medium speed until fluffy, about 3 minutes. Reduce speed to low. Add flour mixture in three batches, mixing well after each addition. Cover dough with plastic wrap; refrigerate 30 minutes.
