MINTY PEAS & ONIONS

Minty Peas & Onions image

I have served this delicious side dish many times over the years. The original recipe came from one of my favorite community cookbooks,"Enough to Feed an Army." I usually serve this as an accompaniment to lamb as the mint flavor blends quite nicely with lamb. If you are in a hurry, you can simply melt the butter in the pan and proceed wthout waiting for it to brown. Since mint plays a major role in this recipe, is it highly recommend that you stick with fresh rather than dried mint. Tip: I snip my mint leaves with kitchen shears.

Tips:

  • Use high-quality ingredients: The quality of your ingredients will greatly impact the flavor of your lemon rice with peas and green onions. Use fresh, flavorful lemons, and choose high-quality basmati rice. You can find excellent basmati rice at most grocery stores or online.
  • Don't overcook the rice: Overcooked rice will be mushy and unpleasant to eat. Cook the rice according to the package directions, or until it is tender but still has a slight bite to it.
  • Use a flavorful broth: The broth you use to cook the rice will add a lot of flavor to the dish. Use a flavorful vegetable broth or chicken broth. If you don't have any broth on hand, you can use water, but the flavor will be less intense.
  • Don't be afraid to experiment with different ingredients: This recipe is a great starting point, but you can easily customize it to your liking. Try adding different vegetables, such as chopped carrots or bell peppers. You can also add different herbs, such as cilantro or mint.

Conclusion:

Lemon rice with peas and green onions is a delicious and versatile dish that can be served as a main course or a side dish. It is also a great way to use up leftover rice. The bright and tangy lemon flavor, the sweetness of the peas, and the crunch of the green onions make this dish a real crowd-pleaser. So next time you're looking for a quick and easy meal, give lemon rice with peas and green onions a try.
