LEMON VODKA GRANITA

Yield serves 8

Number Of Ingredients 5

4 cups water
2 cups sugar
Zest of 3 lemons, finely grated
1 cup freshly squeezed lemon juice, about 5 lemons
1 cup citrus-flavored vodka

Steps:

  • In a large pot over medium heat, combine the water and sugar. Cook and stir until the sugar has dissolved and the syrup looks clear, about 5 minutes. Remove from the heat and cool the syrup by pouring it into a bowl and putting it into the refrigerator or over an ice bath. Add the lemon zest and lemon juice; stir to combine. Mix in the lemon vodka.
  • Pour the lemon mixture into a shallow baking pan and freeze for 1 hour. Using a fork or a couple of chopsticks, break up all the ice crystals on the bottom and sides of the pan. This incorporates air so the final product literally melts in your mouth. Freeze for 3 to 4 hours, until the mixture has reached a frozen granular consistency. You can serve it two ways: Either rake the granita with the tines of a fork for a snow-cone-like product or run an ice-cream scooper down the length for a smooth Italian-ice-like result. Spoon it into a wine or martini glass.

Tips:

  • Choose ripe lemons: The flavor of the granita will be best if you use ripe, juicy lemons.
  • Use a microplane grater to zest the lemons: This will give you the finest zest, which will distribute evenly throughout the granita.
  • Be careful not to over-mix the granita: Over-mixing will make the granita icy and slushy, rather than light and fluffy.
  • Chill the granita for at least 4 hours before serving: This will allow the flavors to meld and the granita to set properly.
  • Serve the granita immediately after scraping: The granita will start to melt quickly, so it's best to serve it as soon as possible.

Conclusion:

Lemon vodka granita is a light, refreshing, and flavorful dessert that is perfect for summer. It is easy to make and can be enjoyed by people of all ages. With its tangy lemon flavor and hint of vodka, this granita is sure to be a hit at your next party or gathering.
