Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Pasta and Grains

Number Of Ingredients 8

1 tablespoon olive oil
1 shallot, finely chopped
1 cup Israeli couscous
1 1/2 cups Homemade Chicken Stock, or canned low-sodium chicken broth, skimmed of fat
2 tablespoons freshly squeezed lemon juice
1 tablespoon lemon zest
2 teaspoons chopped fresh mint
Salt and freshly ground black pepper

Steps:

  • In medium saucepan over medium-low heat, heat olive oil. Add shallot; cook until translucent but not browned, 3 to 5 minutes. Add couscous; stir to coat with oil. Add stock, cover, reduce heat to low, and cook, stirring occasionally, until couscous is soft and all liquid has been absorbed, about 15 minutes.
  • Remove couscous from heat; stir in lemon juice, lemon zest, and mint. Season to taste with salt and pepper, and serve.

Tips:

  • For the best results, use fresh herbs like mint and dill. If you don't have them on hand, you can use dried herbs, but the flavor will be less intense.
  • If you want to make the dish ahead of time, you can cook the couscous and let it cool completely. Then, store it in an airtight container in the refrigerator for up to 3 days. When you're ready to serve, simply reheat the couscous in a saucepan over medium heat, stirring frequently.
  • You can also add other vegetables to this dish, such as chopped cucumber, tomatoes, or bell peppers.

Conclusion:

Lemony couscous is a refreshing and flavorful dish that is perfect for a summer meal. It is easy to make and can be customized to your liking. Serve it as a main course or a side dish, and enjoy the bright and tangy flavors!
