Time 1h15m

Yield 8 servings

1/3 cup sugar
1 tablespoon baking powder
1/8 teaspoon fine sea salt
1/2 teaspoon pure vanilla extract
2 large eggs, lightly beaten
2 tablespoons vegetable oil
1/3 cup whole milk
4 baking apples (about 2 pounds total), cored, peeled, and cut into thin wedges
1/3 cup sugar
1 large egg, lightly beaten
3 tablespoons unsalted butter, melted

Steps:

  • Preheat the oven to 400 degrees F.
  • Butter a 9-inch springform pan and set it aside.

  • Spoon the mixture into the prepared cake pan. Place the pan in the center of the oven and bake until fairly firm and golden, about 25 minutes.

Tips:

  • Prep your Ingredients: Before you start baking, ensure all your ingredients are measured and ready. This will make the cooking process smoother and quicker.
  • Use Fresh Ingredients: Using fresh, high-quality ingredients will significantly impact the flavor of your cake. Fresh apples, eggs, and butter will produce a more flavorful and moist cake.
  • Cream Butter and Sugar Properly: Creaming butter and sugar together until light and fluffy is essential for a successful cake. This process incorporates air into the mixture, resulting in a lighter and more tender cake.
  • Grate the Apples Finely: Finely grating the apples ensures they evenly distribute throughout the cake batter and do not weigh it down.
  • Fold in Flour Gently: When adding flour to the batter, gently fold it in until just combined. Overmixing can result in a tough and dense cake.
  • Preheat Your Oven: Always preheat your oven to the desired temperature before baking. This ensures even cooking and prevents the cake from sinking in the center.
  • Check for Doneness: Insert a toothpick or skewer into the center of the cake. If it comes out clean, the cake is done baking.
  • Let It Cool: Allow the cake to cool completely before frosting or serving. This will help the cake set properly and prevent it from falling apart.

Conclusion:

The Lenten apple cake is a delicious and versatile treat perfect for any occasion. With its moist and flavorful crumb, this cake is sure to be a hit with family and friends. Experimenting with different apple varieties and spices will allow you to create a unique and personalized cake every time. Whether you enjoy it as a simple snack or a special dessert, the Lenten apple cake is a delightful recipe that celebrates the bounty of the season.
