LIGHT ALFREDO SAUCE WITH LINGUINE

Light Alfredo Sauce With Linguine image

I wanted something comforting but, not too high in fat. My kids love this! Serve w/ a salad and bread!

Provided by HelenG

Categories     Low Cholesterol

Time 35m

Yield 6 serving(s)

Number Of Ingredients 10

1 tablespoon olive oil
2 -3 garlic cloves, pressed (or more)
1/4 cup flour
1 (14 ounce) can chicken broth
1/3 cup sour cream (or plain yogurt)
6 cups cooked linguine
6 tablespoons parmesan cheese, freshly grated
1/4 cup parsley, freshly chopped
salt & pepper
1 -2 cup cooked meat (optional) or 1 -2 cup vegetables (optional)

Steps:

  • Saute garlic in oil, in a sauce pan 1-2 minutes.
  • In small bowl mix flour and broth together until there are no lumps. Add to pan and simmer until it thickens.
  • Turn off heat. Stir in yogurt, pasta, optional meat/veggies and half of the parsley and half of the cheese. Add salt and pepper to taste.
  • Stir again and top with remaining parsley and cheese.
  • We love this with chicken. I usually serve it with a salad and bread.
  • Enjoy!

Tips:

  • Choose the right cheese. Freshly grated Parmesan cheese is the best choice for Alfredo sauce, but you can also use Pecorino Romano or a blend of the two. Avoid pre-packaged shredded cheese, as this often contains cellulose or other fillers.
  • Use quality butter. Unsalted butter is the best choice for Alfredo sauce, as it allows you to control the saltiness of the sauce. If you are using salted butter, reduce the amount of salt you add to the sauce.
  • Don't overcrowd the pan. When cooking the chicken or shrimp, do not overcrowd the pan. This will cause the food to steam rather than sear, resulting in bland and watery results.
  • Cook the sauce until it is thick and creamy. The sauce should be thick enough to coat the back of a spoon. If the sauce is too thin, continue to simmer it over low heat until it reaches the desired consistency.
  • Serve the sauce immediately. Alfredo sauce is best served immediately after it is made. However, you can store the sauce in the refrigerator for up to 3 days or in the freezer for up to 3 months.

Conclusion:

Alfredo sauce is a classic Italian dish that is easy to make and can be enjoyed by people of all ages. By following the tips above, you can make a delicious and creamy Alfredo sauce that is perfect for any occasion. So next time you are looking for a quick and easy meal, give this light Alfredo sauce a try.
