Time 35m

Yield 18 serving(s)

Number Of Ingredients 16

2 3/4 cups all-purpose flour
1 cup granulated sugar
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup canned pumpkin
3/4 cup nonfat sour cream
1/3 cup nonfat milk
1/4 cup vegetable oil
1 teaspoon vanilla extract
1 large egg
1 large egg white
cooking spray
1 tablespoon granulated sugar
1 1/2 teaspoons brown sugar

Steps:

  • Preheat oven to 375°.
  • Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 5 ingredients (flour through salt) in a medium bowl, stirring with a whisk. Make a well in center of mixture.
  • Combine pumpkin and next 6 ingredients (pumpkin through egg white); add to flour mixture, stirring just until moist. Spoon the batter into 18 muffin cups coated with cooking spray.
  • Combine 1 tablespoon granulated sugar and brown sugar; sprinkle over muffins.
  • Bake at 375° for 25 minutes or until muffins spring back when touched lightly in center. Remove muffins from pans immediately; cool on a wire rack.

Tips:

  • Use fresh or canned pumpkin purée: Fresh pumpkin purée provides the best flavor, but canned pumpkin purée is a convenient substitute.
  • Don't overmix the batter: Overmixing can result in tough muffins. Mix just until the ingredients are combined.
  • Use a standard muffin tin: A standard muffin tin yields 12 muffins. If you use a mini muffin tin, you will get more muffins.
  • Fill the muffin cups about 2/3 full: This will prevent the muffins from overflowing.
  • Bake the muffins until a toothpick inserted into the center comes out clean: This will ensure that the muffins are cooked through.
  • Let the muffins cool for a few minutes before serving: This will make them easier to handle.

Conclusion:

Light pumpkin muffins are a delicious and healthy treat that can be enjoyed for breakfast, lunch, or a snack. They are easy to make and can be customized to your liking. With so many different recipes available, you're sure to find one that you love. So next time you're looking for a light and fluffy muffin, give pumpkin muffins a try!
