My husband lived in Italy for 3 years, so he's really picky about his Italian cuisine! I needed a great meal that was super-quick one night for his dinner; I had spicy battered shrimp on hand that I wanted to use and a couple choices of dried pasta. This sauce sounded perfect to tie it all together! Served over tortiglioni pasta with salad and toasted Italian bread. Just like I spent all day on dinner. It is really hard to mess-up this kind of white sauce. In my opinion, it was very much like an Alfredo sauce! Of course there is very little difference in the two sauces.

2 tablespoons butter
2 tablespoons margarine
3 tablespoons all-purpose flour
1 cube chicken bouillon, crumbled
1 ½ cups boiling water
1 cup 2% milk
ground white pepper to taste

Steps:

  • Melt butter and margarine in a saucepan over medium-low heat; stir in flour and bouillon until roux is well blended. Continue to cook and stir until thickened and lightly browned, about 5 minutes. Increase heat to medium and whisk water into roux until smooth. Stir in milk; cook and stir until thickened, about 2 minutes more. Season with white pepper.

Paired with some garlic toast or a salad, you will have a very wonderful dinner! This sauce is flexible in the additives your add, and also works great with stuffed pasta, though my personal favorite is making this with sharp cheddar, and just pouring this over macaroni! My favorite cheese otherwise in this is freshly grated parmesan. Yumm!

1/2-2/3 cup whole wheat pasta
3 tablespoons skim milk
1 tablespoon nonfat sour cream
1 teaspoon whole wheat flour
2 tablespoons grated low-fat cheese
salt

1 dash nutmeg

Steps:

  • Boil water then add noddles in, cooking until desired softness.
  • In the meantime, pour all the sauce ingredients into a sauce pan, heating at medium heat.
  • Mix until all ingredients are incorporated before allowing to simmer and thicken, stirring often until at desired thickness and cheese is melted and incorporated. Add more milk to simmer if you wish a thinner sauce. Add more cheese to taste if you prefer.
  • Drain pasta and pour sauce over pasta. Enjoy!

1 small head garlic, separated into cloves
3 pints heirloom cherry tomatoes
1 pint cocktail cherry tomatoes
4 small shallots, roughly chopped
¼ cup olive oil
salt and ground black pepper to taste
1 (15.5 ounce) can white beans, drained and rinsed
¼ cup freshly grated Parmesan cheese
¼ cup julienned fresh basil leaves
1 dash balsamic vinegar
1 (16 ounce) package whole wheat penne pasta

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line 2 baking trays with aluminum foil, raising the sides so the foil creates a boat. This will prevent juices from leaking onto the trays, allowing for easier cleanup.
  • Smash garlic cloves and remove peel. Halve all the tomatoes.
  • Divide garlic, tomatoes, and shallots among the prepared baking sheets. Coat with olive oil, salt, and pepper; give a toss with your hand to ensure even coverage. Flip all tomatoes so their cut-sides are up.
  • Place trays into the preheated oven and roast for 30 minutes, stirring and rotating trays halfway through. Remove from the oven and transfer vegetables and any accumulated juices to a bowl to cool.

  • While the sauce is cooking, bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain and reserve 1 cup cooking water.
  • Add pasta to the sauce in batches, coating it well with sauce before adding more and drizzling in cooking water to bind the sauce to the pasta as you go. Serve immediately.

1/4 cup extra-virgin olive oil, plus more for drizzling
4 cloves garlic, thinly sliced
1 small bunch (8 ounces) curly-leaf kale, stems and ribs removed, torn into bite-size pieces (4 1/2 packed cups)
1 can (15 ounces) cannellini beans, drained and rinsed
2 teaspoons finely grated lemon zest, plus 2 tablespoons fresh juice
Kosher salt and freshly ground pepper
12 ounces Khorasan-wheat tagliatelle, such as Kamut, or other wide whole-grain pasta
1 ounce Parmigiano-Reggiano, finely grated (1 cup)
1/2 cup packed fresh parsley leaves, finely chopped

Steps:

  • Preheat oven to 350°F. Spread almonds in a single layer on a rimmed baking sheet and toast until fragrant and golden, 10 to 12 minutes.
  • Heat oil in a large straight-sided skillet over medium-high. Add garlic and cook, stirring, until light golden, about 1 minute. Add kale and cook, tossing, until bright green, about 1 minute.
