Scalloped potatoes with melted cheese is a timeless classic side dish, served at countless weeknight dinners and holiday gatherings alike. The rich, cheesy potatoes can come with a hefty calorie count, but they can be lightened up without sacrificing any of the flavor. Here are some tips on how to make a delightful lightened version of scalloped potatoes with cheese: opt for low-fat milk and cheese, use vegetable broth instead of cream, cut back on the amount of butter used, add in lean protein (such as chicken or tofu), use herbs and spices for flavor instead of salt and pepper, and bake the potatoes in the oven instead of frying them.

LIGHTENED SCALLOPED POTATOES WITH CHEESE

Lightened Scalloped Potatoes With Cheese image

Adapted from Cooking Light. If you prefer a different flavor cheese, then you may substitute whichever type you prefer, just so long as it is real cheese and not reduced fat. This recipe has already reduced the fat a lot from typical versions, and the amount of the cheese is just enough to give the taste and texture of the real real thing without going overboard. Also - if you are not watching your fat/calories, by all means use whole milk and butter if you prefer.

Tips:

  • Yukon Gold potatoes are a good choice for scalloped potatoes because they hold their shape well and have a creamy texture.
  • Use a sharp knife to thinly slice the potatoes. This will help them cook evenly.
  • Don't overcrowd the baking dish. If the potatoes are too crowded, they will not cook evenly.
  • Bake the potatoes until they are tender and slightly browned on top. This usually takes about 45 minutes.
  • Garnish with fresh parsley or chives before serving.

Conclusion:

This lightened-up version of scalloped potatoes is a delicious and easy side dish that is perfect for any occasion.
