CHOCOLATE TRUFFLE CHEESECAKE

Chocolate Truffle Cheesecake image

I first served this at a holiday dinner party to rave reviews. I don't remember where I got the recipe originally, but it has been a hit! The cake will seem underbaked in the center but will firm up as it is cooling and it will firm up further in the refrigerator. I recommend baking your cheesecakes the day before you need them. You can decorate the top with melted white chocolate or with truffles.

WHITE CHOCOLATE-CHEESECAKE TRUFFLES

White Chocolate-Cheesecake Truffles image

So little effort, for such a big reward. These delectable truffles of white chocolate, with a hint of lemon and crushed butterscotch for crunch, go down a treat. I made these as gifts for Christmas, and everyone moaned with delight and said they tasted just like a cheesecake. Store truffles in a tightly covered container in the refrigerator if not serving immediately. They can also be frozen.

Tips:

  • Use high-quality chocolate: The quality of the chocolate you use will directly impact the flavor of your cheesecake. Opt for a good-quality semisweet or bittersweet chocolate with a cocoa content of at least 55%.
  • Don't overbeat the cheesecake batter: Overbeating the batter can incorporate too much air, which can cause the cheesecake to rise too much in the oven and then fall when it cools, resulting in a cracked top.
  • Bake the cheesecake in a water bath: Baking the cheesecake in a water bath helps to create a moist and creamy texture. Place the cheesecake pan inside a larger roasting pan filled with hot water before baking.
  • Chill the cheesecake thoroughly: Chilling the cheesecake for at least 4 hours, or overnight, allows the flavors to meld and the cheesecake to set properly.
  • Top the cheesecake with fresh berries or chocolate shavings: For a finishing touch, top the cheesecake with fresh berries, chocolate shavings, or a drizzle of chocolate sauce.

Conclusion:

This lightened-up chocolate truffle cheesecake is a delicious and decadent dessert that is perfect for any occasion. With its creamy chocolate filling and rich chocolate truffle topping, this cheesecake is sure to be a hit with everyone who tries it. So next time you're looking for a special dessert to make, give this chocolate truffle cheesecake a try. You won't be disappointed!
